Ingredients

  1. 3 (6 ounce) cans canned chicken, drained
  2. 1 tablespoon cilantro, finely chopped
  3. ½ teaspoon chili powder, or more to taste
  4. 3 avocados, halved lengthwise and pitted
  5. 1 teaspoon lime juice, or to taste

Instructions

  1. Stir chicken, cilantro, and chili powder together in a bowl.
  2. Arrange avocado halves on serving dish and brush with lime juice. Spoon chicken mixture into avocado halves.

I modified this recipe for two, and used olive oil and salsa with the chicken since my cilantro had gone bad. My husband likes spice, so I had to lay down the chili powder! The only thing we didn’t like was this: it was a bit hard to eat, and for that reason I think the avocados ought to be peeled before topping them with the chicken mixture. Edit: Since then, my husband said it might be better made as a salad. Today I did just that! So simple!

It was good.. I didnt feel right using canned chicken so I grilled some myself and it was alright. I measured out the same amount of chicken that would normally come in the can so that the recipe would be the same. Although after mixing everything together in the bowl I could barely take the chili powder so for anyone thinking about making this I would add extra chili powder and lime juice. It fit in the avocado perfectly so I recommend trying it, it won’t be for everyone. I will definitely be making it again. Did not take long at all to make!

Easy to make, used rotisserie chicken. Made for my husband, he asked me to make more. The second round, I added jalepeno and garlic. Devoured them. I was able to take a picture of the last one.

I modified the recipe just a bit. it was delicious. I cooked my chicken breast didn’t use canned meat (cooked it in chicken stock). I also used salt and pepper and added a little mayo to the chicken. was really good.

Made several adjustments such as adding garlic salt seasoning, also added a side of pico de Gallo, tomato, onion and cilantro with lime side salad and using cooked grilled chicken instead of canned. It came out pretty good and was quick. Although this is more of a Tex-Mex type of food not at all Mexican style. Would make again if I’m on a time crunch or crazing Tex-Mex food.

Tasty and healthy for a lunch! I found the recommended amount of chili powder wasn’t enough. As well, only good for leftovers the next day, because of the browning of the avocado! Would definitely make this again.

Definitely use rotisserie chicken that you grab from Costco or elsewhere. Absolutely amazing meal my family devoured and asked to have once a week. It is NOT bland if you add enough chili powder and cilantro. Use the recipe as a guide only. I did drizzle olive oil into the mixture to help the favors blend and to keep the chicken moist. This dish was PERFECT. And, the mixture DOES scoop into and onto the avocado half for a beautiful presentation (the reviewer who said it didn’t must have had very tiny avocados because mine were not large). Each family member ate at least 2 halves… served with homemade Spanish rice made by another recipe on here called “perfect Spanish rice” I believe. Awesome dinner!

I read the reviews and made the following changes: added cumin and garlic powder as well as the chili powder; chopped a green onion and a tablespoon of cilantro and added that in; added a tablespoon of sour cream and juiced half a lime to moisten it. Also sliced avocado and arranged on plate to facilitate eating. Husband and I both loved it! Will make again!

LOVED IT! I used frozen diced chicken, thawed of course. I diced the avocado, skipped the cilantro only because I didn’t have any. I used a homemade chili powder that included red pepper flakes. After thawing the chicken, I cut into smaller bits, sprinkled with garlic powder, salt, pepper, and chili powder. I added the avocado, lime juice, chipotle hot sauce, and sliced black olives. Mix together. Can be served with tortilla chips or just eat the way it is.

Surprised no one else mentioned this, but I scooped out the avocado from the skins, chopped it and added to the other ingredients, along with some fresh garlic & salt, then piled it back into the empty skins. Looked good & tasted great!

We loved how quick and easy this was! We used a rotisserie chicken from the store and it was a bit dry. It made the recipe even easier, but we needed a way to moisten the meat a bit more. The lime juice really helped the flavors pop!

I really liked this lunch idea, the one thing I added was some mayo to the chicken and it was bomb, if you take some tostada chips and dip it – it’s also pretty darn good
