I was given a friend’s recipe for these fantastic summer chicken kabobs years ago. Any vegetables you like can be skewered. When you see light corn syrup listed among the ingredients, don’t be alarmed; it works out well and is a welcome change. Even better, just skewer the chicken and omit the vegetables.

Ingredients
- 1 cup vegetable oil
- ½ cup soy sauce
- ½ cup light corn syrup
- ¼ cup lemon juice
- 2 tablespoons sesame seeds
- ½ teaspoon garlic powder
- ¼ teaspoon garlic salt, or to taste
- 4 skinless, boneless chicken breast halves – cut into 1 1/2 inch pieces
- 2 onions, quartered
- 1 (8 ounce) package fresh chopped mushrooms
- 1 green bell pepper, cut into large chunks
Instructions
- Whisk together vegetable oil, soy sauce, light corn syrup, lemon juice, sesame seeds, garlic powder, and garlic salt in a medium bowl. Add chicken; stir to coat. Cover the bowl and marinate in the refrigerator for at least 2 hours.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Thread chicken onto skewers alternately with onions, mushrooms, and bell pepper. Pour marinade into a small saucepan; bring to a boil. Cook until slightly thickened, 5 to 10 minutes.
- Place skewers on the preheated grill; cook, turning frequently, until chicken is no longer pink and juices run clear, 15 to 20 minutes. Baste frequently with boiled marinade during the last 10 minutes.

This was very simple to make considering they were marinated kabobs. A near unanimous complaint, however, was the lack of taste to the chicken. It should have been stronger but somehow, following the recipe exactly, they just didn’t turn out as expected. It was okay and they were eaten but I don’t believe I will ever make them again.
Yum! Based on other reviews, I also substituted about 1/3 cup of honey for the corn syrup, and since I don’t have a grill, I baked the kabobs in the oven at 350 for 35 minutes on a large baking sheet on parchment paper. Basted 1/2 way thru. I used red and yellow peppers, sweet onion, chicken breasts chunked and mushrooms. Definitely will make again, and I hope to have a grill for the next time!

The kabobs were delicious! Love this marinade! For personal preference I used red bell peppers and zucchini slices as well as the onion on the skewers. I always sub coconut aminos for the soy sauce in all recipes to reduce sodium and have never found it to negatively alter the recipe. (Found at Trader Joe’s) Thank you for this recipe. It is a keeper!!
Whole family loved even the smallest at 13 months. I smoked it for 45 min then cooked on bbq for 30. I will try to marinate it overnight next time to get extra flavor.
This was a great addition to our monthly meals. The chicken was tender and delicious. I did what other reviews said and added honey and used less soy sauce. I also added pineapple, peppers, mushrooms and onion. Great meal and will make it again.
I’ve made this several times now and even my picky grown daughter loves it. I usually serve with rice and salad. The longer the marinade the better!
This is a good recipe. I marinated chicken separate from the accoutrements – onion, pineapple, red pepper, tomato. I didn’t baste while cooking as I don’t ever reserve marinade for that purpose or make extra to cook down. The flavor was there after marinating for about 10 hours, however could be bumped up a bit. In my opinion it was almost too subtle. The surprise ingredient of corn syrup provided the right amount of sweet. I used this recipe because I had all the ingredients on hand. If I use again, I’ll add about 1/2 tsp sesame oil and crushed pepper flakes for starters. Thanks for the recipe! 🙂

Simple recipe for the marinate and my family liked it. Instead of sesame seed I used a ground sesame paste (Tahini). It still was the lemon flavor that came through.

Really tasty mix. I kept a little heavy in the mixture to add taste.
Made these this weekend, and just swapped out honey for the corn syrup, per another’s review. Also didn’t have sesame seeds on hand so skipped that, but received rave reviews on these at the family cookout. Even my father-in-law who hates chicken decided to try them and loved them! That’s super impressive!!
I followed the recipe exactly. My husband & I really enjoyed it! I think next time, I’d make a little more marinade so that you have more to baste on it.
also added pineapple. Had half the chicken (boneless skinless thighs) but the whole recipe of marinade and perfect 2nd time used no pineapple but added red pepper
This marinade is really good for chicken. I like the chicken diced so the flavor saturates it more then grilled in a grill basket. Awesome. If you don’t want to buy corn syrup (which you might never use outside this recipe) just use 1/2 cup sugar and 2 TBSP water and heat in the microwave until you have syrup.

Excellent marinade. Added mushrooms, cherry tomatoes, bell pepper, onions and pineapple to the kabobs. I doubled the amount of chicken in the recipe but didn’t increase the marinade and it was more than enough. I marinated the chicken for about 5-6 hours. Wonderful meal.
