Lower-Calorie Creamy Chicken Casserole

Ingredients

  1. 1 serving avocado oil cooking spray (such as Pam®)
  2. 1 (10.75 ounce) can reduced-fat cream of chicken soup (such as Campbell’s®)
  3. 2 cups cubed cooked chicken breast
  4. 1 ½ cups frozen mixed vegetables
  5. 1 cup low-fat Greek yogurt
  6. salt and ground black pepper to taste
  7. ½ cup shredded fat-free Cheddar cheese (such as Kraft®)
  8. 24 reduced-fat buttery round crackers (such as Ritz®), crushed

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray an 8-inch baking dish with cooking spray.
  2. Mix cream of chicken soup, chicken, vegetables, yogurt, salt, and pepper until combined. Pour into the baking dish and top with Cheddar cheese. Sprinkle crushed crackers over cheese and spritz with avocado oil.
  3. Bake in the preheated oven until hot, about 30 minutes. Spritz with avocado oil again and broil until crackers are golden brown, 2 to 3 minutes.

The only thing that didn’t work is that the broiling at the end set the topping on fire. I scraped that off, put on a different topping, and it was delicious. The only alteration I made to this recipe is that I used fresh asparagus as the vegetable. I will definitely make this again. Easy, delicious, healthy. It had a slightly sour taste, but in a good way. My husband thought it was delicious, too. The asparagus was a nice complement to the sour yogurt. I would recommend this recipe.

I made this chicken bake for our guest tonight and wow it was really really delicious and so easy!!! My husband and I are tracking calories so I replaced the ritz with some breadcrumbs (not sure if the calories are less but I didn’t want to buy ritz crackers we’d have to eat later on) and it was still so delicious. I’ve always been hesitant to bake foods and whatnot but this was so incredibly easy. Definitely recommend!!!

I baked my chicken breast season with salt, pepper, italian seasoning and onion powder for extra flavor. (Baked more chicken than required use the extra chicken and make chicken salad for another meal. I followed this very easy recipe, just added pepper ( no salt), italian seasoning and onion powder with other ingredients.

I always add some frozen peas & a bit of garlic powder. We watch our intake of carbs, so I top my casserole off with slightly crushed Kellogg’s Corn Flakes (cereal) which I toss w/dried parsley, paprika & granulated onion flakes. I lightly spray the topping (w/Pam) before putting the dish into the oven.
