Ingredients
- 2 tablespoons olive oil
- ½ cup diced onion
- 1 large cooked chicken breast, shredded
- 1 ½ teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon ground black pepper
- ½ teaspoon seasoned salt
- ½ teaspoon red pepper flakes
- ½ teaspoon ground cumin
- 1 cup shredded Cheddar cheese
- 2 (4 ounce) cans diced green chiles
- ¾ cup milk
- 2 large eggs
- ¼ cup crushed pork rinds
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking pan.
- Heat oil in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
- Combine onion with shredded chicken, chili powder, garlic powder, black pepper, seasoned salt, red pepper flakes, and cumin. Stir in 1/2 cup Cheddar cheese and green chiles. Spread in the bottom of the prepared baking pan and top with remaining Cheddar.
- Whisk milk and eggs together in a bowl. Stir in crushed pork rinds and pour over top of the casserole.
- Bake, uncovered, in the preheated oven until top of casserole is set, about 45 minutes.

Just a tiney bit too spices but overall very good
I made this to use up some leftover rotisserie chicken. I would’ve been better off using it in soup. I love spicy food but my gut told me that two cans of chopped chilies was too much and I was right. Way too spicy. This is a small 8 in.² baking dish; it only needs one can. Needed some sour cream to cut back some of the heat. I wouldn’t make this again.
This was a big hit, even for people who “don’t like casseroles”. I would use a little less chili powder next time, as the flavor seemed really strong. Maybe a little more cumin to balance the flavors better? Great weeknight dish.
YUMMMM!!!, but I am “one of those” who had to modify because of ingredients on hand (not because I’m chef-ier than you : – used a pound of ground beef (browned with the onion) – had only one can of diced chiles (didn’t miss the other can at all) – added an extra egg to account for the extra meat.

Quick to put together, and very tasty! I increased the amount of pork rinds and reduced the milk the second time I made it, and liked it better that way.

Deleted delicious. Didn’t use the pork. Just added mozzarella and some cheddar.

Really good! I used twice the chicken and more chilies. I didn’t have pork rinds so I just put more cheddar cheese on top and it made a real nice topping. I think next time I’ll use some sour cream in the chicken mixture or maybe in with the eggs mixture. And I did use heavy cream instead of milk to make it more keto friendly. This one’s a keeper!

Was very good. I used leftover chicken thighs with cutup bacon so was a bit greasy. Cut chili powder down a bit, still has a nice kick to it. Will make again.
Wow, loved it. Served on a bed of cabbage/coleslaw, with avocado slices and sour cream then drizzled cilantro lime sauce. Recipe could be doubled for large family or potluck dinner.
Excellent. Would cut back the n red pepper flakes unless you really love heat.
