This chicken is sweet, tangy, and moist, and it cooks up quickly and easily. Although mashed potatoes are wonderful too, I serve with rice. culinary comforts from my grandmother.

Ingredients

  1. 4 skinless, boneless chicken breast halves
  2. ⅔ cup diced onion
  3. 1 ⅓ cups ketchup
  4. ⅔ cup apple cider vinegar
  5. ⅓ cup packed brown sugar
  6. 1 tablespoon ground dry mustard
  7. 1 teaspoon ground ginger
  8. salt and black pepper to taste

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray an 8×8-inch baking dish with cooking spray. Place the chicken breasts into the prepared baking dish.
  2. Stir together the onion, ketchup, cider vinegar, brown sugar, ground mustard, ginger, and salt and pepper in a saucepan until the mixture is well combined. Bring to a boil over medium heat, and simmer until slightly thickened, about 15 minutes, stirring frequently.
  3. Pour the sauce over the chicken, cover the dish with foil, and bake for 20 minutes. Remove the foil, and bake the chicken breasts until no longer pink in the center and the juices run clear, and the sauce is slightly browned and bubbling, about 10 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

We really liked this dish. Sweet and sour is nicely balanced in the abundant sauce. I used skinless, bone-in chicken thighs, and threw some broccoli over the top for the last 10 minutes. Next time I will add even more vegetables.

I LOVED this recipe! So fresh and tangy with ingredients everyone has on hand. I can see how some might think the vinegar is too strong, but I personally loved the tanginess of this dish. It would be easy to reduce the amt. of vinegar to one’s taste. I would definitely recommend this dish and will be making it often. 🙂

This was not good. The smell in my house was over powering, the taste also. My husband refused to even try it. I am sorry, maybe it just isn’t for everyone.

Must have done something wrong. It has an overpowering smell from the vinegar and overpowering taste. Cant put this one on my family again.

This recipe has potential. It reminds me very much of my cola chicken recipe i use…..i found the amout of cider vinegar VERY overpowering i would reduce it to about 1/4 cup…..and probably decrease the brown sugar as well…..theres lots of sweet in the ketchup. Some other liquid would need to be added though…..it would be too thick otherwise. Maybe just some chicken broth. It has potential…but need some major tweaking. The acidity was too high.

Very good. I like barbecue flavored chicken but don’t care for shredded barbecue chicken….this is perfect. A bit of different flavor with the addition of ginger. I served this with rice and a veggie…a keeper.
