Ingredients
- 1 large egg, beaten
- ½ cup all-purpose flour
- ¾ cup dry bread crumbs
- ⅓ cup freshly grated Parmesan cheese
- ¼ cup flax seed meal
- 2 teaspoons lemon zest
- 1 teaspoon dried oregano
- ¼ teaspoon ground cayenne pepper
- ¼ teaspoon kosher salt
- freshly ground black pepper to taste
- 3 (6 ounce) boneless skinless chicken breasts, flattened slightly
Instructions
- Place beaten egg in a shallow bowl, add flour to another bowl. Combine bread crumbs, Parmesan cheese, flax seed meal, lemon zest, oregano, cayenne, salt, and pepper in a third bowl.
- Dip each chicken breast into flour, then egg, and lastly bread crumb mixture, fully coating the chicken on both sides. Set coated chicken breasts into an air fryer basket. Depending on the size of your air fryer, you might need to cook them in batches.
- Set the air fryer to 375 degrees F (190 degrees C). Cook chicken breasts for 10 minutes. Turn and cook until chicken is no longer pink in the center and the juices run clear, about 5 more minutes. The coating should be golden and an instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I made this almost as written. I used gluten free ingredients (flour and bread crumbs) and did not follow the breading directions. I failed to read the directions. I mixed the flour and breading mix together, so I dipped chicken in egg and then the breading mixture. I did need to cook my chicken longer than 15 minutes. This may have been because of my chicken breast size. I cooked for an extra 12 minutes. The end result was chicken breast that my entire family ate and pretty much liked. personally, I liked the lemon flavor from the lemon zest. I don’t think i’ve added lemon zest to a breaded chicken recipe before but it is definitely something I would try again.
My family and I enjoyed this dish. Very easy to prepare and a nice change for an airfryer chicken recipe. Ths chicken was a little dry so next time I am adding another egg to help coat the parmesan breading to the chicken.
This was really tasty, more than I anticipated. The only cheese I had on had was cheddar and it still turned well. It was quick and easy to make, a big plus in my book! I will be making it again.
