Ingredients
- 1 tablespoon vegetable oil
- 2 pounds skin-on, bone-in chicken thighs
- ½ cup chicken stock
- 2 stalks celery, chopped
- 1 cup barbecue sauce, divided
Instructions
- Turn on a multi-functional pressure cooker (such as Instant Pot) and select Saute function. Heat oil until hot. Add chicken thighs and cook until browned, about 3 minutes on each side. Transfer chicken to a plate.
- Pour chicken broth into the pot. Cook and scrape up brown bits with a wooden spoon to deglaze the pot, about 1 minute. Turn off Instant Pot®. Add celery, 1/2 cup barbecue sauce, and browned chicken thighs to the pot. Stir to combine.
- Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
- Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler to low.
- Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Transfer chicken to a baking sheet and baste with remaining 1/2 cup barbecue sauce.
- Broil for 5 minutes or until crisp.

Quick, easy and delicious! Make sure to season your chicken well before sauteing! I used MF’re All Purpose Sodium Free Seasoning. I used Sticky Fingers Mustard Based Carolina Barbecue Sauce!
Easy but needed clarity on actual Instant Pot time
This recipe was easy, fast, and delicious. The only change I made was to use teriyaki sauce instead of barbecue sauce. Definitely a keeper!
I used chicken quarters cut into thighs and legs. Didn’t have barbecue sauce and I didn’t feel like slugging to the supermarket. So I mixed Szechuan Spice Sauce (hot peppers, onions, ginger and garlic), honey and a few drops of ‘Liquid Smoke’ together. It didn’t come out any where near spicy as I thought, though the chicken was excellently tender and moist. Still give it a 5, though next time I’ll probably either use fresh jalapenos or another fresh pepper.

This was fantastic, considering how easy it was, and how few ingredients were needed! The chicken was very tender and juicy. I can see how the BBQ sauce used would make all the difference in the world. I used Famous Dave’s rich and sassy. I browned the chicken thighs in a skillet, as I don’t like using the saute function of the Instant Pot. Low is too low, and high is too high. The skillet has more room, also. This one is a keeper!
There were no leftovers!!! Delicious and I will make it again.
Absolutely delicious ! We followed the recipe as written – with the exception of adding a tad of cayenne to the barbecue sauce before dividing it. At first, the addition of celery was puzzling, but it definitely adds to the recipe, and we would never omit it. This is a keeper! Thank you Soup Loving Nicole.

Tasty and definitely fall off the bone tender. I added onion and garlic as well as the celery. I also seasoned the chicken thighs with Epicure Bacon and Roasted Tomato before browning the thighs.
