Ingredients

  1. 4 cups shredded, cooked chicken
  2. ½ cup onions, diced
  3. 2 cups shredded Cheddar cheese
  4. 1 cup mayonnaise
  5. 2 tablespoons prepared horseradish
  6. 2 teaspoons onion powder
  7. 2 teaspoons garlic powder
  8. ¾ teaspoon salt
  9. ½ teaspoon freshly ground black pepper

Instructions

  1. Combine chicken, onions, Cheddar cheese, mayonnaise, horseradish, onion powder, garlic powder, salt, and pepper in a bowl. Mix well. Serve warm or chilled.

This is so good! Used a rotisserie chicken. Added finely chopped celery. Used green onions instead.

I have never made chicken salad even though I love it. This was so easy using leftover chicken breast. I chopped it into bite sized pieces and made the recipe as written. Maybe a little more black pepper as that is the only ingredient I didn’t measure.

Wow, I love it! I used a store bought rotisserie chicken and the only thing I changed was no onion salt because I had onions and salt in the mix. It’s easy, only a few ingredients and packed full of flavor!

I am giving this a 4 star as I was the minority (my vote; 3 stars). Everyone really liked this. I made exactly as written but I think it needs a little more horseradish as its presence in the dish was very subtle- which If you are serving those that are leery of horseradish This might be the way to go!l Or Maybe sub a TBLS or 2 of horseradish Mayo? Give the added zing and flair that I love about horseradish without making your nose tingle! Again; everyone I served to really liked – I just want more kick. Served on croissants and the next day With crackers – it makes a lot! Thanks for the recipe!

I was looking for something different to use up a grilled chicken breast for next day lunch and this recipe didn’t disappoint. I shredded the breast with a fork, left out the salt and subbed half the Mayo with Greek yogurt.

Honk if you love horseradish! I originally made this because I had all the ingredients on hand (easy). It’s really good. It’s a sophisticated, savory chicken salad. The horseradish isn’t overpowering- it just adds another layer of flavor. Next time I’ll serve it on a croissant as a sandwich.
