Hawaiian Pineapple Chicken

I adore this brown sugar and pineapple baked chicken. The sauce is acidic and sweet. I pair it with green beans and serve it over rice. I received this recipe many years ago from my mother-in-law.

Ingredients

  1. ¼ cup butter
  2. ⅓ cup ketchup
  3. ¼ cup brown sugar
  4. 2 teaspoons cornstarch
  5. ¼ cup vinegar
  6. 1 teaspoon salt
  7. 1 teaspoon soy sauce
  8. ½ teaspoon Worcestershire sauce
  9. 1 (9 ounce) can crushed pineapple
  10. 3 pounds assorted chicken pieces such as breasts, thighs, wings, and drumsticks

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Melt butter in a saucepan over medium heat. Add ketchup and brown sugar and stir until sugar dissolves. Whisk cornstarch into vinegar in a small bowl until smooth, then pour into the pan. Whisk in salt, soy sauce, and Worcestershire sauce and bring to a simmer while continuing to whisk constantly. Cook until thickened, about 2 minutes. Stir in pineapple and remove from the heat.
  3. Arrange chicken pieces in a 9×13-inch baking dish; pour pineapple sauce over top.
  4. Bake in the preheated oven until the sauce is bubbling and the chicken is browned and the juices run clear, about 45 minutes. An instant-read meat thermometer inserted into the thickest part of a thigh should read at least 165 degrees F (74 degrees C).
  5. I usually double the sauce since my family really enjoys it. I also use slightly less butter than what is called for, and it still comes out great.

I always double the sauce and I add an entire 20oz can of some kind of pineapple (tidbits, chunk, crushed), juice included. I also always use chicken breasts. It is absolutely one of our favorite family meals. One time I made it for a huge group of teens (my kids friends) and they all loved it, even the picky ones. I did 4x sauce for that group. Always serve this over rice, Yum!

I love this recipe but I made some changes. I always double the sauce ingredients because everyone likes to pour the sauce over their rice. I do a full can of pineapple chunks and stir it into the sauce once it’s thickened. Of course it makes it a bit runny again but it’s so tasty no one cares. Sometimes I sub pork for the chicken which is tasty but not as good as chicken. It’s one of those meals that I can everyone to eat even picky eaters. Sometimes throwing some sliced red peppers into the sauce is an extra yummy taste as well. Yum!

I’ve made this a few times and it is really good! I always just used one pan on the stove, so easy that way. Even my picky DH loved it! That’s amazing b/c he is sooooo picky! It’s a very versatile recipe that can be adapted to what you like. I put carrots in it and snap peas and I used tomato sauce instead of ketchup once and it always turns out great

This was so very tasty! We loved it. Next time, I might drop back on the butter and sugar. It was a bit sweeter than we prefer, but it was still very, very good. I only had pineapple slices in a 20-oz can, so I put half of the slices in a food processor and ground them up, placing the remaining slices on top for garnish with a sprinkle of pepper and tarragon. Pretty and yummy. This recipe is a keeper!

I fixed it exactly as the recipe said except for one thing. I didn’t have crushed pineapple, but pineapple chunks. I drained the juice from that and put it in a mug and refrigerated it so I could have it later. This recipe was delicious. The ultimate critic I live with loved it…I will definitely have this again, and by the way, the juice was good too, drank it this morning!

Delicious !!! Tweaked it a bit. Added a clove or two of minced garlic, and a little smoked Chipotle pepper for a subtle zing. It was good advice to double the sauce. It allowed to have left over to pour over rice and along with the meat (boneless skinless thighs) made a nice rice bowl. Next time might add some zucchini to the sauce after it is cooked, should only take about 10 minutes or so to allow it to soften a bit. This one will be a new regular go to dish.

Another review said it tasted like tomato soup and I have to agree. I gave it two stars instead of one because with more soy sauce it was edible. Won’t make again, or maybe I will but without the ketchup.

I cannot really review the recipe as I had to make several changes. I had a couple of cooked chicken legs so I guestimated the amounts and after cooking the sauce for a few minutes in a saucepan, I put the chicken in a glass dish, poured the sauce over and microwaved on medium for several minutes. Served with rice it was very good.

Was very good. I didnt have brown suger so i subed with white suger and a touch of maple syrup. Was fantastic. My picky son ate all his chicken. Quick easy and delicious.

This was really tasty, much like the Hawaiian Pork my mother used to make. I added yellow peppers and used fresh pineapple. Really nice 🙂
