For a Sunday breakfast at our cafe, try this tried-and-true ceviche recipe. The majority of Latinos think that eating ceviche is better done outside on a sunny day. Constipation and nightmares are brought on by rainy days. Of course, most Latinos (especially my wife) can prepare a tasty ceviche whether they are wearing blindfolds or not, in my opinion. Excellent as a main course or as an appetizer in smaller servings. For me, it goes well with a cool beer on the side.

Ingredients

  1. 4 (6 ounce) chicken breasts
  2. ½ (17 ounce) bottle sriracha sauce
  3. 1 ½ tablespoons grated habanero peppers, or to taste
  4. 1 tablespoon butter, melted
  5. 1 dash ground paprika
  6. 1 dash ground black pepper

Instructions

  1. Combine chicken, sriracha sauce, habanero peppers, butter, paprika, and black pepper together in a resealable container. Marinate in the refrigerator, 4 to 5 hours.
  2. Preheat grill for high heat and lightly oil the grate. Lay a sheet of aluminum foil over the grill and cut slits into it.
  3. Place the marinated chicken on the aluminum-foil lined grill. Cook until no longer pink in the center and the juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  4. Feel free to replace the habaneros with another hot pepper of your choice.

This was excellent! The title is deceiving but I’m thinking this would work great with wings too. If you are sensitive to heat I recommend leaving out the hot pepper altogether. I liked the flavor it added but it did pack a punch. This was super simple and one I will definitely make again. 5 stars all the way!
