Greek-Style Chicken Salad

This light and energizing variation on classic chicken salad features cucumbers, roasted chicken, tomatoes, Greek yogurt, and feta cheese. Add more dill as a garnish.

Ingredients

  1. 1 cup diced English cucumbers
  2. 1 ¼ teaspoons salt, divided
  3. 2 tablespoons diced red onion
  4. 1 cup Greek yogurt
  5. ⅓ cup chopped Kalamata olives
  6. 1 ½ tablespoons chopped fresh dill
  7. 2 teaspoons red wine vinegar
  8. 2 teaspoons lemon juice
  9. 1 teaspoon garlic, minced
  10. 1 teaspoon lemon zest
  11. ½ teaspoon dried oregano
  12. ¼ teaspoon ground black pepper
  13. 3 cups diced cooked chicken
  14. ¾ cup crumbled feta cheese
  15. ½ cup diced seeded plum tomatoes
  16. 1 head Bibb lettuce, or more as needed

Instructions

  1. Place cucumbers in a colander; set onto a plate. Toss cucumbers with 1 teaspoon salt. Let rest to draw about liquid, about 30 minutes. Pat dry with paper towels.
  2. Place red onion and 1 cup cold water in a bowl. Let soak until the strong onion flavor is weakened, 5 to 10 minutes. Drain and rinse.
  3. Combine cucumbers, red onions, Greek yogurt, Kalamata olives, dill, vinegar, lemon juice, garlic, lemon zest, oregano, and black pepper in a bowl. Fold in chicken, feta cheese, and tomatoes. Cover with plastic wrap; refrigerate salad for at least 1 hour.
  4. Stir salad and serve on lettuce leaves.
  5. Crackers can be used in place of the lettuce.

Left out the pepper and used Roma tomatoes instead but this is what a Greek chicken salad of this type should be! Full of flavor and light. Tzatziki is made with a lot the ingredients used in this and souvlaki marinade as well. I put it in a pita and topped with the lettuce etc. but you could use bell peppers if you’re gluten free/keto…Yum!

I had to use dried dill but otherwise followed the recipe using Just Chicken from Trader Joe’s. The only thing I’d do differently would be to use less yogurt—at least to start with and then add what you think is needed. What a great way to use leftover chicken! We had a nice dinner! Thanks!
