Fried Cabbage and Kielbasa

Ingredients

  1. 6 slices bacon
  2. 1 head cabbage, chopped
  3. 1 large onion, chopped
  4. salt and ground black pepper to taste
  5. 1 (16 oz) ring kielbasa sausage, sliced thin

Instructions

  1. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble. Reserve drippings in the skillet.
  2. Cook and stir cabbage and onion in bacon drippings over medium-high heat until cabbage begins to wilt, 1 to 2 minutes. Stir bacon, salt, and pepper into cabbage mixture; cook until cabbage is wilted, 3 to 5 minutes more.
  3. Stir kielbasa into cabbage mixture and reduce heat to low. Cover the skillet and simmer until cabbage is lightly golden and tender, about 1 hour.
  4. The longer you simmer, the browner the cabbage will turn, but it will also give it a mushy texture by cooking it too long. This recipe also works excellent with sauerkraut instead of regular cabbage.

I make this every couple a months. The only changes I make is using shredded cabbage in a package, cold slaw mix and substitute a tablespoon of Herbes de Provence spice blend for the salt & pepper. The bacon adds enough salt.

I browned the kielbasa in the bacon grease and then added everything else, let it simmer for awhile,only used a half head of cabbage(thought the whole was too much)It smelled and looked delicious, but not very filling, so I did about 5 small potatoes in the microwave,chunked them and added, now that is a meal!

This was delicious! The only adjustments I made were to add crushed red pepper (we like things spicy in our house) at the time I added the salt and pepper and I ended up not covering/simmering for an hour. I left it uncovered simmering for about 15-20 minutes while stirring it frequently to help keep the cabbage somewhat crispy. Definitely will make again!

Our family love Kielbasa and we also loved cabbage so I thought this would be a great meal. I followed the recipe almost exactly, except i only used a little of the bacon grease (per other reviews) it turned out OK but probably not something I will make again.

I’ve been making cabbage and Kielbasa for a long time. I’ll use coleslaw mix to save time and the mess. Bacon and onions are in the mix as described. The only difference is that instead of frying, I’ll bake it in a roasting pan @350°. Precook kielbasa let cool, slice thin and layer cabbage, kielbasa onions and season with zesty Italian dressing. Cover with foil and bake for about an hour. You don’t need to precook cabbage. I usually make it using 5 pounds of cabbage and Kielbasa for a large crowd and it freezes well.

Added a clove of garlic which I cooked with the onions. I also added some small potatoes that I microwaved first and then cooked in the bacon fat thus making it a one pot meal. Otherwise followed the recipe. There was nothing leftover.

This recipe is better than I thought it would be. I had Kielbasa and didn’t know what to do with it. I added some Italian turkey sausage, 2 apples (peeled & sliced), 1/2 cup apple cider & a dash of ground mustard. I only simmered 15 mins as I don’t like mushy cabbage. It was great! My husband even liked it and he’s not a cabbage fan.
