Ingredients
- 1 ½ tablespoons chopped fresh rosemary leaves
- 1 teaspoon lemon zest
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- 4 chicken thighs
- olive oil cooking spray
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine rosemary, lemon zest, salt, and pepper in a bowl. Rub over chicken thighs and place into a baking dish. Spray with cooking spray.
- Bake in the preheated oven until no longer pink in the center and the juices run clear, 35 to 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

This delicious simplicity. No sauces or breading, just subtle lemon rosemary flavor. I used skinless thighs, by the way. Loved it.
This was delicious, a definite keeper for me. I made it according to the instructions, but i ended up needing about twice the seasoning indicated. I squeezed some lemon juice into the lemon zest/rosemary mixture to create a thick slurry, then brushed the chicken with that. Baked uncovered for 40min. It came out great. So easy, so quick, and so good.
This was yummy and super easy to make. My family devoured it. I made gravy out of the drippings and served it with potatoes and broccoli. A winner!

Made as written and these turned out pretty good. They were very flavorful. The recipe did not specify whether to use skinless boneless thighs or skin on. I used skin on because I wanted to be able to stick them under the broiler for a few minutes in the end to get some crisp to them. This was easy to throw together and the fresh rosemary makes a big difference in flavor.
