Red bell peppers and feta cheese are added to a traditional chicken salad dish to create this one. To enhance flavor, try using tomato-basil feta!

Ingredients

  1. 3 cups diced cooked chicken
  2. 2 large stalks celery, diced
  3. 1 medium red bell pepper, seeded and diced
  4. ½ medium red onion, diced
  5. 6 tablespoons mayonnaise
  6. 6 tablespoons sour cream
  7. 1 (4 ounce) package feta cheese, crumbled
  8. 2 teaspoons dried dill weed
  9. salt and ground black pepper to taste

Instructions

  1. Mix chicken, celery, and red onion together in a serving bowl.
  2. Stir mayonnaise, sour cream, feta cheese, and dill together in a separate bowl. Pour over chicken mixture, and stir to blend. Taste, and season with salt and pepper as needed.
  3. Serve immediately, or refrigerate until serving.
  4. The magazine version of this recipe (called Feta Chicken Salad Pinwheels) uses a slightly modified (and doubled) version of this chicken salad and wraps it in sandwich wraps. Please follow directions carefully for whichever version you are using.

I just whipped this up in my food processor – fabulous. I made it as written (6 tbsp is just a shy over 1/3c). The feta is faint but there and I would not skip it. I went for a full tablespoon of dill (because I LOVE dill) and not sorry I did.

Absolutely delicious. Even though I forgot the dill it turned out great. I did use some Adobo All Purpose Seasoning and substituted fat free plain Greek yogurt for the mayonnaise and low fat sour cream. Probably added closer to 6 ounces of Feta. Best chicken salad ever! One thing, the recipe calls for one red bell pepper, but doesn’t specify where to add it, with the chicken, celery and red onion mix or the mayonnaise, sour cream, dill and feta mixture. No big thing, as obviously it makes no difference. It would be delicious mixed with either as everything goes together in the end. Will be making this often so thank you so very much for the recipe.

Very good, quick and simple recipe. I made as directed (with a little less red onion) and had to sub Miracle Whip for the mayo. I added a pinch of curry and a few cherry tomatoes, chopped.

I liked this. Heavy dill taste, which I like. Feta taste got lost IMO. I would leave it out next time (and save some money).

To us, only okay good: 3.5 stars. Followed exactly but used shredded, rotisserie chicken. It was super easy but just not a ton of flavor – even with the feta and dill. No regrets that we tried! But will keep trying to find my next, new favorite. Thanks CHELC44!

The flavor is amazing! I would never have thought to put feta in chicken salad but it really adds something. I would definitely cut down on the Mayo and sour cream, like maybe use half what the recipe calls for. Otherwise, so good!

I substituted non-fat yogurt for the sour cream & added pecans, golden raisins and Sweet Bourbon Mustard. Also drizzled a little honey over the mixture. It came out pretty good for a first try this recipe.

Had leftover chicken and a container of feta, only half a red pepper and a bit of sweet onion. This chicken salad came out great. Will definitely make this again. I may try blue cheese crumbles next time.

This is delicious! I followed the suggestion of another reviewer and substituted plain Greek yogurt for the sour cream. I didn’t have a red onion, so I used green onion instead. The Feta cheese was salty on its own, so I reduced the amount of salt I added. And, I had some slivered almonds, so I added them as well. Just a bit more crunch to add to the celery. This is beautiful to look at and tastes light and healthy. I will make it again!
