Ingredients
- ¼ cup Worcestershire sauce
- 2 tablespoons soy sauce
- ½ lime, juiced
- 1 tablespoon dried minced onion
- 1 teaspoon red pepper flakes
- 1 teaspoon dry mustard
- ½ teaspoon Kosher salt
- ¼ teaspoon thyme
- ¼ teaspoon ground black pepper
- ¼ teaspoon dried, minced garlic
- 3 dashes hot pepper sauce (such as Tabasco®), or to taste
- 2 (4 ounce) venison steaks
Instructions
- Whisk together Worcestershire sauce, soy sauce, lime juice, onion, red pepper flakes, dry mustard, salt, thyme, black pepper, garlic, and hot pepper sauce in a bowl; pour into a resealable plastic bag. Add venison steaks, coat with marinade, squeeze to remove excess air, and seal the bag. Marinate in the refrigerator for at least 1 hour.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove venison from marinade and shake off excess. Discard remaining marinade.
- Cook steaks on the preheated grill until they are firm, hot in the center, and just turning from pink to grey, about 5 minutes per side. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C).

I used venison loin and cooked it using the sous vide method. It was very tender and moist but I very much disliked the flavor. I think it was the lime juice. I’ll leave it out next time.

This marinade for venison was amazing. We used venison loin and marinated it for about 8 hours. Grilled on med as recommended. It was moist, tender and not gamey. Will make it again with another cut of venison.

Delicous! I subbed basil for the thyme because i didnt have any and added a tsp of liquid smoke, plus I didnt have the dried mustard. Only marinated for 2 hours. After grilling I let it rest for 5 minutes covered before slicing into fine cuts. We had it over a spinach salad, super delicous, moist and tender.
I marinated backstrap with this and it was the best venison I’ve had in my life!
I let our venison chops marinate in this all day in the fridge, But I added 3 to 4 tablespoons of olive oil because I had five chops in the baggy. I flip the baggy over every couple of hours. We grilled them and they were delicious!

We loved it. One of my daughters hates venison. I used this recipe with cubed steaks. She didn’t realize what she was eating till she was almost done. Lol she said I thought it looked too dark for beef!
Great flavor for grilling venison or tougher cuts of beef. Add 2 tbsp of brown sugar for an equally great marinade for jerky.
Came out great. Made it just like the recipe, except I used garlic powder. Was delicious with a little kick.

Amazing! If kids are eating, use less red pepper . I had to double marinade recipe to get enough to soak it
