Ingredients
- 2 tablespoons olive oil
- 1 green bell pepper, chopped
- 1 small onion, chopped
- 2 (14.5 ounce) cans diced tomatoes
- 3 cooked andouille sausage, cut into quarters
- 1 (10 ounce) package frozen cut okra, thawed
- 2 tablespoons Cajun seasoning, or to taste
- 2 teaspoons salt
- 2 pounds peeled and deveined medium shrimp (30-40 per pound)
Instructions
- Heat the olive oil in a skillet over medium heat. Stir in the bell pepper and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the tomatoes and simmer for 10 minutes, then add the okra, sausage, Cajun seasoning, and salt. Cover and cook for 30 minutes. Stir in the shrimp and cook until they are bright pink on the outside and the meat is no longer transparent in the center, 8 to 12 minutes.

Delicious! I was born and raised in Louisiana so I’m used to food like this with spice. I made the recipe as printed and used Tony’s Chachere’s and got the spice I wanted and salt to get the saltiness I wanted also some garlic and onion powder. I season to taste. I cooked rice also for it. I bought medium shrimp already cooked and only had to take the tail off. I just stirred it into the hot dish. I did not cook the shrimp in it. Whoever said it was bland made it wrong. Also some like bland but we love spicy. I season to taste so I don’t always measure unless I’m baking. My husband said it’s the best I’ve ever made. Just tweak it.
I made this, substituting rotisserie chicken and bacon for the shrimp and sausage. I added celery and a can of Rotel tomatoes. Served with rice, it was great!!

I have made this recipe several times. I use 2 cans of Rotel and no salt. The Cajun seasoning has plenty of salt for me. Very tasty and very easy to make.
A little under sauced. I ended up using an additional can of diced tomatoes.
I slow cooked it, that’s all.
I added one can of crushed tomatoes.
Definitely will make again…big hit with the gf and the guys at work!
Our garden is over-producing okra this summer, so I have been trying new recipes. I wanted to make this meatless for Friday meals so I eliminated the sausage. I also added Garlic and used Rotel for the tomatoes. I only used 1 can of Rotel because it would have been too soupy.
I’ve made this recipe several times. I use salted butter to saute my veggies, and I add celery to it. Sometimes I add chicken, but I cook it first. I will also add a can of rotel, depending on who I’m cooking for. It is always a hit with my coworkers!!

I didn’t use any oil because the fat from the sausage is enough. I used beef sausage, but deer sausage would be even better. Also, I added garlic. It turned out great and doesn’t take long at all to cook.
This turned out phenomenal! Tasted just like I remember as a kid. This was actually my favorite of all the things my mom cooked for dinner. I did not add any meat as I’ll add a meat serving to the serving I eat in order to have flexibility . My only alterations were adding celery with the bell peppers and onion as suggested by other raters and instead of 2 cans of dIced tomatoes I used one with 2 cans of 8oz tomatoes sauce. I also did not have time for okra to thaw but it still came out great. Will definitely be making this again and again.

Dear wife and I made this just the other day. We used our frozen tomatoes and okra we had in the freezer. Added what ingredients that was needed and we’re both happy the way it turned out. We’ll be making this again real soon. We both love the taste of extra shrimp and sausage in our gumbo.
I would definitely make this again. I spiced it up with a healthy pinch of cayenne pepper and it turned out really good.
