Easy Apple Cider Chicken

Ingredients

  1. 2 cups apple cider
  2. ⅓ cup brown sugar
  3. 2 tablespoons ground cinnamon
  4. 1 tablespoon lemon juice
  5. 1 teaspoon ground nutmeg
  6. 6 skinless, boneless chicken breast halves

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Whisk apple cider, brown sugar, cinnamon, lemon juice, and nutmeg together in a bowl.
  3. Place chicken breasts in a single layer in the bottom of a large casserole dish. Pour apple juice mixture over chicken breasts. Cover casserole dish with aluminum foil.
  4. Bake chicken breasts in the preheated oven until no longer pink in the center and the juices run clear, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

far too rich for me. hardly liquid. I don’t understand how people can drink this. great taste but overwhelming texture. yeah.

I am making it now but I wanted to say this before I forget. It would be helpful for beginner cooks to know if they spices are suppose to totally blend into the mixture or not. There were still granulated bits on the bottom after I was done whisking and I didn’t know if that was ok or if I needed to keep mixing

I really liked this recipe, but I did make a couple changes. There wasn’t enough cinnamon for my taste, so I sprinkled each side of each breast with some cinnamon first. I then grilled the breasts on my George Foreman grill to get a nice sear on the outside to lock in all the natural juices in the meat. Then I put them in a covered casserole in the oven for 45 min instead of an hour. The grilling gave a rich brown caramelizing effect to the sauce as well. Very tasty. I added my picture to the recipe. I hope you enjoy my changes :o)
