Crispy Panko Chicken Thighs

Olive oil and bread crumbs give these panko chicken thighs their delicious flavor and crunch. We like to assume that my wife and I devised this dish. It is well-liked in our home because our children adore it. I hope you also enjoy it.

Ingredients

  1. cooking spray
  2. 1 cup mayonnaise
  3. 1 teaspoon paprika
  4. ¾ cup panko bread crumbs, or as needed
  5. 1 teaspoon garlic powder
  6. 4 bone-in chicken thighs

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Line a baking dish with aluminum foil; grease with cooking spray.
  2. Combine mayonnaise and paprika in a bowl; mix well. Stir together panko and garlic powder in a second bowl.
  3. Spread mayonnaise mixture over each chicken thigh; press into panko mixture to coat. Place in the prepared baking dish; spritz thighs with cooking spray.
  4. Bake in the preheated oven until chicken is no longer pink at the bone and the juices run clear, about 1 hour. An instant-read thermometer inserted near the bone should read at least 165 degrees F (74 degrees C).
  5. You may substitute cumin or other seasoning blends for paprika; adjust that seasoning and garlic powder to taste.

Granted I used seasoned Panko bread crumbs and didn’t add the seasonings mentioned above, but even taking the easy route this was great!!! I think the olive oil spritzed on top was a really great flavor. Between that and the meat’s own juices, it was so flavorful. Thank you!

Here’s an idea! I substituted honey mustard for the mayo, wrapped the thighs in a slice of bacon, and added shredded mozarella on top. It’s sooo good! I also added onion powder to the recipe.

I have a fried chicken only eater and have tried numerous recipes to try and get him to eat a variety of chicken with no success. Made this recipe, exactly as written, and he actually came to me and asked me to make more because he loved it. A first! My chicken did not come out crispy but moist with a “gravy” that I put on top of the chicken.

These came out really crispy. Using mayo as the drudge was so easy and had the same effect as straight egg yolks. I added a little salt and pepper for more taste. I didn’t have 45 minutes, so I followed his instructions but using a ninja foodi (air crisp @ 400°, 12 minutes each side). I’ll definitely make this again

I only had about 3/4 c. mayo so I made up the test with Dijon and ranch dip. Also added poultry seasoning. Tasty!

Good and crispy, use less mayo (3/4 cup or less) and more panko crumb mix (1 cup). Added garlic powder, onion powder, ground pepper and seasoning salt to panko crumb mix.

This is similar to what we call Party Chicken in our household. We mix cream of chicken with the mayonnaise. We add shredded cheese before adding Panko. Sometimes use chicken breasts. It’s probably in top 3 favorites.

I made this a couple of nights ago and it was fabulous! I didn’t have paprika on hand but used chili powder….wonderful addition. The chicken was tender and juicy with a crispy coating. I will be making it again!

“LOVED IT” The only item I would change is cooking spray . I don’t do cooking spray. I brushed my oven grill with veg oil. 1 Hour time may seem too long at 375, trust me it’s perfect.

Very tasty, though I did make some changes… I used the Chipotle flavored mayo along with some Ancho Chili Powder in the mayo mixture. I also brined the chicken prior to dipping & breading it. I also dipped the chicken in the mayo mixture before breading it with the Panko.

This came out juicy and crisp, as well as attractive looking. I dumped 6 thighs into the seasoned mayonnaise and laid them out on lined pan. I tossed panko with a Tbsp each butter and olive oil and pressed it on top. Done in 35-40 minutes convection omen.

This is great. Really! Basic flavor but sometimes that’s what I want. Makes a great crust and super moist and sooo easy! Next time I’ll try 1/2 C Mayo I think it’ll be plenty. Add any flavors you want. The panko is the key! Crispy fried chicken without the oil! Yay!
