Ingredients
- ⅔ cup dry potato flakes
- ⅓ cup grated Parmesan cheese
- 1 teaspoon garlic salt
- 1 (3 pound) chicken, skin removed, cut into pieces
- ⅓ cup butter, melted
Instructions
- Heat the oven to 375 degrees F (190 degrees C). Grease or line with foil a baking sheet or a 13×9-inch baking pan.
- In a medium bowl, combine potato flakes, Parmesan cheese, and garlic salt. Stir until well mixed.
- Dip chicken pieces into melted butter or margarine, and roll in potato flake mixture to coat. Place in prepared pan.
- Bake for 45 to 60 minutes, or until chicken is tender and golden brown.

I used garlic roasted potato flakes.i don’t know if that made a difference but this chicken was amazing! I couldn’t stop eating it! Will definitely be making this a lot!
Yummy!
Substituted real garlic for the garlic salt and added to melted butter. Also added Ritz crackers, seasoned salt and poultry seasoning to flakes and Parmesan cheese. We used drumsticks and a couple breasts which all turned out fabulous! Served with mashed potatoes and steamed broccoli. Yummy!

My husband’s favorite! I used sour cream and chive flavored potato flakes.
Used skinless, boneless chicken breasts and added 1/2 tsp onion powder. My husband said it’s his favorite ever.

Twice I tried making this dish. Easy to do and coating was good. However chicken was too dry and lacked moisture. What did I do wrong?
Easy to make and the chicken was very juicy. I will add a few more spices next time a little basil perhaps.
I made some of the changes suggested by other users and the flavor was good. I baked the chicken on a rack, but the bottom of the chicken was still soggy.

I really enjoyed this recipe, simple and very tasty. The only thing of note is there are absolutely no “Herbs” in the recipe. Garlic salt while very good is not an “Herb”I’m my opinion this should be “Oven Baked Crispy Garlic Parmesan Chicken”
I made this tonight and it had very little flavor and it was done before the breading even barely browned . Not a fan
I love this chicken, I only use legs and I add onion powder and garlic pepper to the mixture, I leave the skin on and cook a bit longer, like a half hour more,,,And I call it crispy baked chicken, dropped the herb.
Based on other reviews, I made some changes. I added oregano, basil, onion powder and Italian seasoning. I baked it on a cooling rack on the cookie sheet and also used boneless, skinless breasts since that’s all I had. After baking it until the desired internal temperature it still wasn’t crispy so I put it under the broiler on high for a few minutes. One piece caught on fire and was a bit too crispy but the others were quite tasty. I will make it again, albeit with a fire extinguisher close at hand! Thanks for the recipe!

I followed the recipe except I baked it for 45 minutes at 375 degrees and 15 minutes at 400 degrees. It was very crispy and brown. My husband absolutely loved it.

This recipe as is rather bland. And where are the herbs? Anyone who has rated this recipe above 2 stars added multiple herbs and spices to make it a 4 star recipe. Sorry, but I rate them as written because recipes are a repeatable process that should come up with the same outcome. The outcome created by those who rated it 4 stars would not be the same as those who actually used the recipe as is.
