My love of jollof rice, a staple in West Africa, served as the inspiration for this stew. It is packed with spices, fresh garlic, onions, tomatoes, carrots, and other ingredients, and it simmers for a sufficient amount of time to allow the flavors to meld. To soak up the excess broth, serve with naan bread.

I should have listened to my gut as I was prepping and cut the salt in half. This casserole was way too salty! Otherwise, it would be good for breakfast, brunch, or as I had it, for dinner. I didn’t have a rimmed pizza pan, but it turned out perfectly in a 9×13.
Amazing! I found hawaiian crescent roll dough and that hits it out if the park! I also put some extra cheese topping on about 3 minutes before it’s done. Great breakfast, the rectangular shape makes cutting into portions and storing so much easier. Everybody that’s tried it raves how good.
