This is a pretty simple dish that uses ingredients you probably already have at home. Ideal with coffee after dinner or during office potlucks. The whipped cream or ice cream topping is a favorite among my sons. Change it up a bit by using a different kind of cobbler or sliced peaches or cherries in a can.

Ingredients
- 3 tablespoons olive oil
- 1 ½ tablespoons red wine vinegar
- 1 lime, juiced
- 1 teaspoon chili powder
- ½ teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- cayenne pepper to taste
- salt and freshly ground black pepper to taste
- 1 pound skinless, boneless chicken breast halves – cut into 1 1/2 inch pieces

Instructions
- In a small bowl, whisk together the olive oil, vinegar, and lime juice. Season with chili powder, paprika, onion powder, garlic powder, cayenne pepper, salt, and black pepper. Place the chicken in a shallow baking dish with the sauce, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.
- Preheat the grill for medium-high heat. Thread chicken onto skewers, and discard marinade.
- Lightly oil the grill grate. Grill skewers for 10 to 15 minutes, or until the chicken juices run clear.

We smoked/grilled these kabobs with hickory wood and they were fantastic! I cooked the chicken with pineapple, bell pepper, and purple onion. I’ll make this again, but I’ll cut back slightly on the spice.

This was outstanding!! I marinated the chicken for 3 hours and it was just beginning to separate from the acidity but still worked nicely on the kabobs. Great low-sodium recipe! I added red onion, red pepper, zucchini and pineapple to the skewers along with the chicken. I also broiled them instead of grilled. Yummy!

Great recipe! Made this and marinated both the chicken and veggies (separate). I added some honey to the marinate and slices of jalapeno for a kick.
I used 2 and a half limes. I olive oiled the skewers, not the grill. When we were on the Keto diet, I grilled the chicken with orange, green and red bell peppers and red onion. When we were off Keto, I added the pineapple. Grilled pineapple is such a treat!
