Chicken Bombs

Chino Latino in the Cosmopolitan Hotel is one of my favorite casual dining establishments in Las Vegas. I tried making chicken posole verde at home, but they have the greatest version. Serve with lime wedges, cilantro, and avocado as garnishes.

Ingredients

  1. 1 (8 ounce) package cream cheese, softened
  2. ¼ cup finely chopped green onion, or to taste
  3. 1 jalapeno pepper, finely chopped
  4. salt and ground black pepper to taste
  5. 8 chicken tenders
  6. 8 slices bacon
  7. 8 toothpicks
  8. 6 tablespoons pepper jelly

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Set a wire rack on top of a baking sheet.
  2. Mix cream cheese, green onion, jalapeno pepper, salt, and pepper together in a bowl.
  3. Pound chicken tenders into a rectangular shape with the flat side of a meat tenderizer. Place 3 tablespoons of the cream cheese mixture in the middle of each tender; fold into a pouch.
  4. Wrap a slice of bacon around each pouch and secure with a toothpick. Top with some pepper jelly. Arrange on the wire rack.
  5. Bake in the preheated oven until bacon is crisp and chicken juices run clear, about 35 minutes.
  6. Be advised that the recipe can be very spicy if you leave the jalapeño pepper membranes intact before chopping.

Love it! Only made 1 change because I like my bacon crunchy.. I cooked the bacon, cut into small pieces and added it to the cream cheese before baking. Turned out great.

didn’t work out for me using tenders. Cheese would not stay wrapped up in tender. For the last pieces I just put the ingredients on top.

wonderful simple recipe 2 per adult keep the chicken thin under quarter in and check 5 minutes early made some with jelly some with barbeque some plain . Family liked the plain best , Will add 2 jalapeno peppers next time. Get the kids involved will make again

This dish was juicy and full of flavor. The cream cheese filling is very rich and I was surprised how full I was after eating only two (which is probably the healthy size portion). I didn’t have jalapeños on hand so I substituted a half can of diced chiles instead. I also added some chopped bell pepper, dehydrated onion mix and garlic to the cream cheese mixture. I did not put any jelly on top because I can only handle a little bit of spice. Honestly, I don’t think it needed any other flavor on top. Next time I make this, I will put it under the broiler for two minutes to top it off as I’d like the bacon a little more crispy and the cheese oozing out the sides a little burnt.

I’ve found that pickled jalapeños work better than fresh. Also my version would put a small taste of BBQ sauce on the chicken followed by a sprinkle of brown sugar replacing the pepper jelly.

These were a great change!! I didn’t have any jalapeños but I had Philadelphia spicy jalapeño spread and used it instead and it worked great!

I do not cook often and this was the first time I ever tried making stuffed chicken and I have to say I’m proud of myself! 🙂 I didn’t have fresh, so I used canned and it came out pretty good but I always prefer the fresh and I used a roasted raspberry chipotle sauce from Costco. I will definitely be making this again!!
