Buttermilk Maple-Bacon Cupcakes

The category for Bacon Dessert at the Winneshiek County Fair awarded these cupcakes first place. They make me think of pancakes!

Ingredients

  1. 2 cups all-purpose flour
  2. 2 cups white sugar
  3. 2 teaspoons baking soda
  4. 1 teaspoon baking powder
  5. 1 ½ cups buttermilk
  6. 3 eggs, beaten
  7. ½ cup vegetable oil
  8. 1 teaspoon maple flavoring
  9. 1 teaspoon vanilla extract
  10. 4 slices crisp bacon, crumbled into bits

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease 20 muffin cups.
  2. Mix flour, sugar, baking soda, and baking powder together in a bowl. Add buttermilk, eggs, oil, maple flavoring, and vanilla extract. Stir in crumbled bacon.
  3. Fill muffin cups 2/3 full of batter.
  4. Bake in the preheated oven until a toothpick inserted into a cupcake comes out clean, 17 to 20 minutes.
  5. I used a standard buttercream frosting recipe, added maple flavoring, and then topped with chunks of crispy bacon.
