Broccoli Cheese-Stuffed Chicken

For the Purim festival, everyone loves eating hamantaschen! The dough needs to be covered and chilled overnight in my experience for it to function best.

Ingredients

  1. 1 ½ tablespoons all-purpose flour
  2. ½ teaspoon paprika
  3. 3 thin chicken breast cutlets
  4. salt and ground black pepper to taste
  5. 3 wedges spreadable garlic and herb cheese (such as The Laughing Cow®), softened
  6. 1 cup frozen broccoli florets, thawed and finely chopped
  7. ¼ cup shredded sharp Cheddar cheese
  8. toothpicks
  9. 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Combine flour and paprika in a shallow bowl.
  2. Place chicken cutlets between two pieces of plastic wrap; pound with a mallet to a thickness of 1/4 inch. Season both sides with salt and pepper.
  3. Mash spreadable cheese with a fork in a bowl until creamy. Stir in broccoli and Cheddar until well combined. Spread mixture over the middle of each cutlet, then roll cutlets over filling and secure the edges with toothpicks. Dredge in flour mixture.
  4. Heat oil in an oven-safe skillet over medium-high heat. Place chicken into the skillet and cook until browned, 2 to 3 minutes per side.
  5. Transfer the skillet to the preheated oven and bake until chicken is no longer pink in the center and the juices run clear, 14 to 16 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove toothpicks before serving.
  6. Feel free to change up the flavor of The Laughing Cow cheese for variety.

My husband and I absolutely loved it! I do tend to add or subtract items to add my own flare to a recipe, but I believe that even if I followed it step by step it wouldn’t have changed the great taste. Instead of the salt and pepper, I used seasoned salt, garlic powder and black pepper. Instead of three laughing cow brand garlic and herb, I used five and I added a little extra sharp cheddar cheese. “My picture does not do this recipe justice”.

I adjusted the recipe for 2 ppl…and I didn’t have the butter with garlic and herbs so I melted butter with a little garlic powder and minced garlic…. ABSOLUTELY AMAZING!!! I had left over filling so I made white rice and mixed the filling in with the white rice

I used Philadelphia Garlic & Herb because I couldn’t find the Laughing Cow. I also had Cheddar Cheese Slices so I used them in addition to the grated cheese. It was excellent & my husband loved it.

It was delicious… I had to use Alouette Garlic and herb cheese, after it was finished baking I placed on a bed of rice… Next time I make this recipe I think I will just slice the chicken breast and stuffed with mixture instead of rolled it… thank you for the recipe!

I mostly used it as inspiration. Instead of the laughing cow cheese, I made a bechamel sauce with garlic and parsley. Instead of cheddar I used mozzarella. Instead of frozen broccoli I used fresh and blanched briefly before chopping. I had no toothpicks, and it really, really helps to use them. Other then that I pretty much followed the intent and timing of the recipe. Dee-Lish!

This is a really good recipe. I prepared it as written, and the only reason I didn’t give it 5 stars, I found it a little salty for my taste. Next time I will not salt the breasts prior to browning. The cheeses have enough salt. Definitely a keeper!

This was a good recipe, I made it as directed except didn’t find laughing cow cheese so I substituted alouette garlic and herb cheese spread, fresh broccoli rather than frozen, I’ll definitely make it again.

It turned out great! I had to use garden vegetable cream cheese instead of the cheese wedges but it was still unbelievably good.
