Ingredients

  1. ¾ cup brown sugar
  2. ½ cup honey
  3. ¼ cup garlic powder
  4. ¼ cup onion powder
  5. 1 tablespoon salt
  6. 1 teaspoon ground black pepper
  7. 1 teaspoon ground cumin
  8. 1 teaspoon cayenne pepper, or more to taste
  9. 1 lime, sliced into wedges
  10. 1 rack pork ribs
  11. 1 (20 ounce) can pineapple chunks drained, juice reserved
  12. 1 (12 fluid ounce) can or bottle beer

Instructions

  1. Preheat oven to 300 degrees F (150 degrees C).
  2. Mix brown sugar, honey, garlic powder, onion powder, salt, black pepper, cumin, and cayenne pepper in a bowl to create the seasoning rub.
  3. Squeeze lime juice over the ribs; rub the seasoning mix on both sides. Place the ribs in a large roasting pan; you may need to cut ribs in half to fit. Distribute the pineapple chunks on top of ribs. Pour beer and reserved pineapple juice directly into the roasting pan. Cover pan tightly with aluminum foil.
  4. Bake in the preheated oven until tender, 3 to 3 1/2 hours. Let stand for 15 minutes.
  5. Remove pan from oven; let cool for 15 minutes before serving.
  6. Check ribs for tenderness using a fork; if not tender and the pan is dry, add more beer, cover, and bake for 15 minutes more.

Definitely the tastiest rib recipes= that I have ever made / eaten. The complementary sweet / spicy was excellent. I ran low on onion powder so I added a little mesquite seasoning to the dry ingredients in the rub, and I mixed in the honey as the last ingredient. The resulting “rub” was quite viscous, but the end product was absolutely delicious! This is a keeper recipe! Thank you for sharing!

Made this as written all up to the point you stick them in the oven. I put mine in the smoker instead. So, this review is based on the rub and not the cooking method. Excellent and super tender!
