Boneless Chicken Breast with Tomatoes, Coconut Milk, and Chickpeas in the Slow Cooker

When I don’t have much time for prep, I make this really simple slow cooker recipe and serve it with rice. Everything just goes into the slow cooker without any prior cooking. Please feel free to add more spice to it if you choose because it isn’t spicy because otherwise my kids won’t eat it.

Ingredients

  1. 1 (14 ounce) can tomato sauce
  2. 5 fluid ounces coconut milk
  3. 5 fluid ounces chicken broth
  4. 2 tablespoons curry powder
  5. 1 teaspoon salt, or more to taste
  6. 1 pinch cayenne pepper
  7. 1 pound skinless, boneless chicken breasts, cubed
  8. 1 (15 ounce) can chickpeas, drained and rinsed
  9. 2 potatoes, peeled and cut into small cubes
  10. 2 carrots, chopped
  11. 1 onion, thinly sliced
  12. ¾ cup frozen peas
  13. 2 tablespoons lemon juice
  14. 1 bunch cilantro, chopped
  15. ground black pepper to taste

Instructions

  1. Combine tomato sauce, coconut milk, chicken broth, curry powder, salt, and cayenne pepper in a slow cooker. Add chicken, chickpeas, potatoes, carrots, and onion. Mix well with the liquid in the slow cooker.
  2. Cook until chicken is cooked through, about 4 hours on High or 8 hours on Low. Add peas and lemon juice and season with salt and pepper. Cook an additional 5 minutes. Divide among plates and sprinkle with cilantro.
  3. Make sure to cut the potatoes fairly small, so they are cooked through. Feel free to substitute sweet potatoes for the potatoes.

Question.. what kind of tomato sauce? Italian? Spaghetti? Just crushed with salt?

Easy! Tasty! My husband asked me to put it on the roster! I doubled the cayenne and used heaping teaspoons of curry as the author suggested to crank up the heat; otherwise I followed the recipe to a tee. (Maybe when winging the quantities, I was a little heavy on coconut milk and stock but all the sauce was good with the rice.) I’ll be making it again! And, possibly, changing it up with different veggies (cauliflower) and proteins! Thank you very much for sharing!

Will make this again! pureed a can of diced tomatoes instead of sauce, forgot carrots(wont do that next time). Even my SO liked it and he usually skips curry spiced dishes. Enjoyed with packaged naan. Maybe next time i will try to make that myself.

Very good! I almost forgot about the cilantro and started to eat it – adding the cilantro definitely made it complete. I even started with frozen chicken breasts and shredded them up at the end.

Just popping in to say that this is rather delicious – I added a lot more broth and coconut milk to make a soup instead, but the flavors are spot on 🙂 Yum.
