Baked Cajun Chicken Drumsticks

A few months back, an aunt gave me a recipe. For a deeper flavor, make sure to use premium cocoa. When reheated in the microwave, wrap it loosely with a paper towel or napkin to prevent it from burning. This keeps well in the refrigerator.

Ingredients

  1. 8 chicken drumsticks
  2. 2 tablespoons vegetable oil
  3. 1 teaspoon paprika
  4. ½ teaspoon salt
  5. ½ teaspoon ground black pepper
  6. ½ teaspoon onion powder
  7. ½ teaspoon garlic powder
  8. ½ teaspoon oregano
  9. ½ teaspoon basil
  10. ¼ teaspoon ground thyme
  11. ¼ teaspoon cayenne pepper

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  2. Place chicken in a gallon-sized resealable plastic bag. Drizzle vegetable oil over the chicken. Seal the bag and massage the oil into the chicken.
  3. Combine paprika, salt, pepper, onion powder, garlic powder, oregano, basil, thyme, and cayenne pepper in a small bowl. Mix until evenly combined. Pour spice mixture into the bag with the chicken. Seal the bag and toss to coat.
  4. Transfer drumsticks to the prepared baking sheet, discarding the plastic bag.
  5. Bake until chicken is no longer pink at the bone and the juices run clear, about 25 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  6. For extra crispy skin, set an oven rack about 6 inches from the heat source and preheat the oven’s broiler. Broil chicken for 5 minutes.

This turned out really good! I am not sure why but I doubled the seasonings. This did not make the drumsticks more spicy or anything- just a punch of flavor in every bite. Bake time was spot on and did the broil step for some crispier outside. Great, super easy recipe SLN! Thank you!

I do not think the changes I made significantly altered the recipe. I had brined the chicken beforehand so I left out the salt. I doubled the paprika and used crushed red pepper instead of cayenne. I put everything in a crockpot and cooked it on low overnight. They were delicious. Before serving them again, I’m going to crispy the outside in the broiler. I like spicy food, but my husband doesn’t. It had enough kick that I liked it but not enough that he complained about it. The meal was a success!

Easy, quick and so yummy!! I did make sure to chicken that didn’t have any extra water and I dried off the skins before seasoning them, which made a really nice crispy skin. My drumsticks were really big, so it took closer to 45 minutes to cook. I will make it again!

I love it! Super-easy prep, I always have what I need to make it. My wife and I love it, and it is a lunch component the next day. I let it sit for an hour or more after putting the herbs and spices on the oiled drummies. I need more cayenne for my next batch now!

This recipe is a keeper! I would definitely double the spice. This is how I prepared the chicken. I washed the drumsticks, padded down with paper towel briefly, make 2-3 scores on each drumsticks and rub a generous amount of spice on each drumsticks individually on the baking pan (lined with parchment paper) then spray a generous amount of oil on each drumsticks. Bake for 20 min

We really loved the spicy flavor of these drumsticks! It was good to change it up from the traditional recipes I usually use. I did have to bake these for much longer than the recipe dictates, but possibly due to the fact that they were very meaty drumsticks. Great with an orzo/rice pilaf and glazed carrots.

I made this for dinner the other night, and while I thought it was good I’d make a few changes. One, I would use more of the seasoning, in fact I would double it. Second, I think I will coat the chicken in oil, put it on the baking sheet and then sprinkle the spice mixture on top. Oh and it took my chicken 45 mins to cook not 25.
