Bacon-Wrapped Turkey Breast Stuffed with Spinach and Feta

My mother had scribbled this recipe on the back of an envelope, which I discovered. The envelope was covered in splatters, so she must have made a lot of it! It’s a really delicious tart recipe that I made.

Ingredients

  1. 1 large turkey breast
  2. ½ teaspoon dried oregano
  3. ½ teaspoon ground cumin
  4. salt and ground black pepper to taste
  5. 1 cup fresh spinach, or to taste
  6. ¼ cup crumbled feta cheese
  7. 12 slices reduced-sodium bacon, or as needed

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Slice turkey breast down the middle and lay it flat. Sprinkle oregano, cumin, salt, and pepper on the inside of turkey. Arrange a single layer of spinach leaves on one turkey half, then top with a layer of feta. Repeat layering with spinach and feta. Fold other turkey half over the last feta layer so the filling is sealed. Wrap bacon around entire turkey breast. Place into a baking dish and season with salt and pepper.
  3. Cook in the preheated oven until no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  4. Turn on the broiler and broil turkey until bacon is crisp on each side, about 2 minutes per side. Let turkey rest for 10 minutes before slicing.
  5. Depending on the size of your turkey breast, you may need to cook it a little longer, just check the temperature, as it will be done when the thermometer reads 165 degrees F (74 degrees C). Try not to let it get past 165 though, or it can get too dry.

Delicious! I added about 2 tablespoons of dried tomato to the spinach-feta stuffing to add some brightness and texture. Next time I may add a balsamic vinegar reduction drizzle on top.

Bacon definitely kept turkey breast moist. For me the filling was too bland. Next time, with the spinach, I am going to use lots of garlic, maybe sauteed crimini mushroom and some kind of cheese with a bit more oomph.

brined the turkey the night before. Had to really apply a lot of string (and toothpicks) to get it to stay in a roll. Cooked almost 90 minutes, actually coulda cooked it a little longer. Delicious, moist, a hit

I made this as published with the exception of Turkey. I used chicken breast and it was fantastic. Not sure if it was the bacon or the feta but it had a very smokey flavor that my wife and I both loved. I paired it with mashed potatoes and glazed carrots and when plated it made for a very nice looking dish. This is a dish I will make again and plan to make it for our next dinner party.

If you take the turkey out at 162 internal, cover with tin foil, it will rest up to appox. 165 degrees.

This was a total hit! I cooked it at 400c – 40min /kg. I roasted it covered with tin foil until last 20 min so the bacon would get nice and crispy. I will definitely make it again.

Great recipe but the cumin was a little overpowering. Back that off to 18 – 14 tap and it would be perfect. We used turkey bacon as well to make it healthier but keep that bacon flavor. Overall great recipe, family loves it!

Awesome recipe. I didn’t have spinach or feta, so I wrapped the breast in bacon, the under side had some butter on it but OMG so good, especially cold on a sandwich ??????

Everyone loved it although for the dark meat lovers I added the added the thighs. Instead of stuffing the breast I pounded them anfd the Thighs out and created two rolls. It came out great.

Turned out amazing! I hate to just make a turkey for thanksgiving as there are only 2 of us, this was a great alternative. Turned out great even with out the seasoning because of the yummy bacon. I’ve already been requested to make it again. Things get a little messy while wrapping the bacon around, but it’s totally worth it.

This was excellent! I butterflied large turkey breast cutlets and did it that way and these were to die for. Getting the bacon to stay on could be a challenge so I recommend using toothpicks to help you along. I already cannot wait to make this one again!
