It’s really simple to make this! The cherries are simply dipped in melted chocolate. A piece of wax paper should always be available. Strawberries work great in the dish as well.

Ingredients
- 4 ounces cream cheese, softened
- 1 cup shredded sharp Cheddar cheese
- 2 fresh jalapeno peppers, seeded and minced
- ½ teaspoon garlic powder
- 1 tablespoon barbecue seasoning
- 2 (8 ounce) boneless, skinless chicken breasts
- 6 strips thinly sliced bacon
Instructions
- Preheat the oven to 400 degrees F (200 degrees C).
- Combine cream cheese, Cheddar cheese, jalapenos, garlic powder, and barbecue seasoning in a bowl. Mix well until evenly combined.
- Cut a deep pocket into each chicken breast, being careful not to cut all the way through to the other side. Fill the pocket of each chicken breast with cream cheese mixture. Wrap each chicken breast with 3 slices of bacon.
- Place a baking rack on top of a baking sheet and place stuffed chicken on top of the rack.
- Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from oven and let rest for 5 minutes before serving.40
- If your chicken is done but the bacon has not crisped up to your liking, turn on the broiler for a few minutes until desired crispness.

This dish was wonderful!! I made a few adjustments based on the ingredients I had on hand (used taco seasoning, Fiesta Blend Cheese, and brushed my chicken breast with a little olive oil, salt and pepper) and it was FANTASTIC! This is a dish I will keep in rotation for sure. Loved it!
Made it with an added bit of hot sauce (3 squirts) and sprinkled a little cayenne powder on top. My wife liked it so that’s what counts.
I made this recipe exactly as written with the exception of a little extra bacon and it was amazing!!! I didn’t cook it on a rack but it was tender and just spicy enough!!!!
This is a very flavorful recipe and a good filling to amp up a plain chicken breast. I would definitely recommend trying this recipe if you like jalapeno poppers and bacon!
Definitely a repeat for me and my husband! I used four chicken breasts however with the filling recommended and only wrapped in 2 bacon slices. Baked for an hour

Made it as close as I possibly could to these specs with what I had at home. Absolutely will be making it again! Delicious, and amazingly juicy considering the length of time that it’s in the oven. The jalapeños were very mild though after baking. I might try something hotter next time.
