Bacon Jack Chicken Sandwich

  4.6 – 162 reviews  • Chicken Breast

Here is a quick recipe for pan-frying cube steaks. It should be served with the gravy or sauce of your choice. You may make a hearty Southern-style supper by serving it with mashed potatoes.

Prep Time: 10 mins
Cook Time: 25 mins
Total Time: 35 mins
Servings: 4
Yield: 4 sandwiches

Ingredients

  1. cooking spray
  2. 8 slices bacon
  3. 2 teaspoons poultry seasoning
  4. 4 skinless, boneless chicken breast halves
  5. 4 slices pepper Jack cheese
  6. 4 hamburger buns, split
  7. 4 leaves of lettuce
  8. 4 slices tomato
  9. ½ cup thinly sliced onions
  10. 12 slices dill pickle

Instructions

  1. Preheat an outdoor grill for medium heat and lightly oil the grate with cooking spray.
  2. Meanwhile, cook bacon in a large skillet over medium-high heat until browned and crispy, 7 to 10 minutes. Drain on a paper towel-lined plate.
  3. While the bacon is cooking, rub poultry seasoning onto chicken.
  4. Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Top each chicken breast with 2 slices bacon and 1 slice pepper Jack cheese; close the lid and cook until cheese is melted, 2 to 3 minutes.
  5. Remove chicken from the grill and place on buns. Top with lettuce, tomato, onions, and pickle slices.

This is one of my all time favorites. My family requests this often. Tip #1: Use a good bun, preferably wheat. Tip #2: Use a good thick cut bacon.

The only thing I added was the tzatziki sauce on the roll. It was awesome.

This was great but I was in able to grill out tonight. So I cooked the chicken on the stove top to 155° then put them into the broiler for 5 min with the bacon and pepper jack on them. No onions though but this was amazing!

Quick and easy meal….I enjoyed how moist the chicken was, and used no mayo or sauce. Very simple!

I cooked the chicken in the hot bacon drippings rather than on the grill, but the sandwich was still delicious! A very nice combination of flavors and textures. Similar to a BLT, only better.

My guys liked this. Am I the only one to think homemade sandwiches are so good but are such a pain to make. LOL!!! Everyone says it’s so easy- I think sammies Are one of the most labor intensive dinners. Oh well… Added a tsp of salt and a TBS of lemon juice to the poultry seasoning as a marinade. Somewhere between the market and home my poor tomato went missing. 🙁 otherwise made as written with turkey bacon (grilled that too) and I cut up a gorgeous loaf of sourdough. This does need a sauce or condiment of some kind. I’ve been requested to make it again- if it’s not too much trouble. HA HA.

Made this pretty easily on the stove top. Went over well I baked the bacon and it was much better then frying it then I put a patesan garlic mayo on it as well as some muenster and Swiss cheese melted on top. I left off the pickles as I like those on the side served it with old fashion potato salad and will do it again! Thnx!

Wonderful recipe! I sauteed mushrooms and onions slowly in butter and olive oil in my cast iron skillet until caramelized and delicious. My husband and I love things spicy so after I grilled the chicken I put it on a pan, added jalapeños, the cheese, and poured Stubbs Spicy Barbeque Sauce over each one. For our children, I placed the chicken on the same pan and added cheddar and placed in the oven to melt the cheese. When I served theirs I put sub-sauce on the buns because they don’t like mayo or barbeque sauce. It was delicious. I will add avocado to mine next time. Very quick and easy and extremely delicious!

Absolutely wonderful! I season the chicken generously with salt & pepper as well as the poultry seasoning. I also coat well with olive oil to not only prevent sticking, but to keep the chicken moist. I pound the cutlets thin and cook for 1 1/2 minutes on each side. They are perfect everyone time. I also top with homemade guacamole.

I have tried this recipe. This is so delicious. I marinated the chicken, and used colby jack cheese slices. The entire family tried them and loved them. This is a keeper recipe.
