Air Fryer Shrimp “Boil”

To cut calories, I occasionally replace half of the heavy cream called for in a recipe with chicken broth. Additionally, I add more Parmesan.

Ingredients

  1. 1 pound baby red potatoes
  2. ¼ cup water
  3. 8 ounces Cajun-style andouille sausage, sliced
  4. 1 ear corn, sliced in half lengthwise and cut into 2-inch pieces
  5. 1 medium onion, sliced into petals
  6. 4 tablespoons olive oil, divided
  7. 3 teaspoons seafood seasoning (such as Old Bay®), divided
  8. 1 pound raw large shrimp, peeled and deveined
  9. 1 lemon, cut into wedges

Instructions

  1. Preheat the air fryer to 400 degrees F (200 degrees C).
  2. Place potatoes in a microwave-safe bowl. Add water and microwave on high for 5 minutes. Run the bowl under cold water until potatoes are cool enough to touch.
  3. Slice potatoes in half lengthwise and place in a large bowl. Add sausage, corn, and onion. Mix in 3 tablespoons olive oil and 2 teaspoons seafood seasoning; stir to coat.
  4. Place shrimp in a separate bowl and add remaining 1 tablespoon olive oil and 1 teaspoon seafood seasoning; stir to coat.
  5. Place 1/2 of the potato mixture in the basket of the air fryer and cook for 10 minutes. Stir and cook for another 5 minutes. Add 1/2 of the shrimp and cook until potatoes are tender, sausage is cooked through, and shrimp are bright pink on the outside and meat is opaque, about 5 more minutes. Transfer to a serving plate and repeat with remaining potato mixture and shrimp. Serve with lemon wedges.

This was an awesome quick dinner! My son loved it. Instead of stirring in a bowl to coat, I tossed it in a baggie. I also bought precooked shrimp and just sprinkled it in the hot food once it was all done. It warmed up the shrimp just fine.

Turned out great! I made a couple of modifications, however. I cooked all of the vegetables first in my air fryer separately from the shrimp, and then held the veggies in my oven on warm on a large sheet pan. I added 1 lb of scallops to the shrimp and cooked them in the air fryer. My concern was making sure the veggies were cooked properly and the shrimp and scallops didn’t get over cooked. I then combined them all on the sheet pan and served. I made this for my girlfriend and my anniversary for about $25. And we each had a enough for lunch the next day as well. One other change I will make next time is to double my corn. Overall very delicious and easy!

Followed recipes completely. It was good but next time I will cut it in half. Too much for just us two. Also used frozen corn as no fresh corn was available. I steamed the frozen corn for like 3 minutes before air frying with the rest of the ingredients.

Great recipe. Thanks. I did let my shrimp cook 10 minutes longer than recommended, but the time on everything else was perfect. I was really surprised on how well the corn cooked, considering that it was fresh corn. I have the Power XL 10-in-1 1500W 6-qt Pro XLT Air Fryer Oven w/ Rotisserie and I’m loving it. I also find great recipes on this site.
