Breaded Eggplant

Ingredients

  1. Deselect All
  2. 2 medium eggplants
  3. Salt and pepper
  4. 2 eggs, beaten
  5. 1 cup milk or half and half
  6. 1 clove garlic, crushed
  7. 3 tablespoons extra virgin olive oil
  8. 2 cups dry panko crumbs
  9. 2 pounds ricotta cheese
  10. 3 eggs, beaten
  11. Zest of one lemon
  12. Juice of one lemon
  13. Salt and pepper to taste

Instructions

  1. Cut off the top of the eggplant and slice crosswise. Sprinkle with salt and arrange the slices on a plate at an angle. Put a weight on top of it to sweat the eggplant, allowing the juices to drain for 1 to 2 hours. Dry the eggplant slices with a paper towel.
  2. Mix the eggs, milk and pinch of salt and pepper in a bowl. Stir the crushed garlic into the olive oil in a cup. Lightly coat a baking sheet with the garlic-olive oil mixture.
  3. Dip each slice of eggplant on both sides in the egg batter and then into the bread crumbs. Tap in the bread crumbs with your palm to get a good adherence to the surface. Shake off the excess crumbs and place breaded slices of eggplant on the baking sheet. Bake for about 10 minutes on each side at 375 degrees until the eggplant is tender
  4. Put the ricotta in a bowl and stir in the eggs; add the remaining ingredients and mix together.

My mom always made eggplant as just breaded and fried. Have always loved it. Happy to find instructions for baking. Like it just that way: No need for ricotta cheese or anything else. I add a little dried Italian Herbs for a variety touch. Oh yes, when my mom made it, there was no such thing as Panko crumbs, just plain ol’ bread crumbs.

Am I missing a step? Are you just supposed to serve the eggplant with raw eggs mixed into ricotta?

I made the eggplant recipe minus the ricotta mixture and served it with spaghetti and tomato sauce. We enjoyed it and it was easy to make. I want to try it again in the summer with the ricotta mixture and a salad

Don’t fix this. It was a waste of two eggs and expensive Panko bread crumbs.
