Cajun Mashed Potatoes

Ingredients

  1. 5 pounds Yukon gold potatoes, peeled and cut into chunks
  2. 2 sticks butter
  3. One 8-ounce package cream cheese, at room temperature
  4. 1 cup heavy cream
  5. 1 tablespoon Cajun Seasoning, recipe follows
  6. 1/2 to 1 teaspoon seasoned salt, such as Lawry’s
  7. 1/2 teaspoon kosher salt
  8. 1/2 teaspoon black pepper
  9. 2 tablespoons garlic powder
  10. 2 tablespoons paprika
  11. 2 tablespoons black pepper
  12. 2 tablespoons kosher salt
  13. 1 teaspoon cayenne pepper

Instructions

  1. Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook until fork tender, 20 to 25 minutes.
  2. Drain the potatoes in a large colander. Place them back into the dry pot and put the pot on the stove. Mash the potatoes over low heat, allowing all of the steam to escape.
  3. Turn off the heat before adding the butter, cream cheese, heavy cream and Cajun Seasoning. Mash, mash, mash! Next, add the seasoning salt, salt and pepper. Mash to combine.
  4. Place the lid on the pan to keep the potatoes warm until you are ready to serve.
  5. Combine the garlic powder, paprika, black pepper, salt and cayenne.

Excellent! I cut the recipe in half, used red potatoes I used half the amount of cream, roasted, pressed garlic mixed into the butter instead of powder, no extra salt beyond the cajun seasoning. Very, very yummy. Goes great with Cajun drumsticks, green bean casserole and buttermilk biscuits.

Not really crazy about this dish. It was creamy and spicy and pleasant tasting but it was also full of salt. I couldn’t get that thought out of my head. And I didn’t even use the whole amount called for. I must add that I love salt but this was a bit overwhelming. If I’m going to consume all that butter and cream and cheese skimping a bit on the salt seemed the better route to take.
