Toasted Mulled Cider Margarita

Ingredients

  1. 12 ounces apple cider
  2. 6 black peppercorns
  3. 2 pieces star anise
  4. 1 cinnamon stick
  5. 1/4 cup sugar
  6. 1/2 teaspoon allspice
  7. 1/2 teaspoon ground cinnamon, plus more for serving
  8. 1 lime wedge plus 4 lime wheels, for garnish
  9. 4 ounces mezcal
  10. 2 ounces lime juice
  11. 2 ounces orange liqueur, such as Grand Marnier
  12. 2 large egg whites

Instructions

  1. Chill 4 large rocks glasses.
  2. Bring the cider, peppercorns, star anise and cinnamon stick to a simmer in a saucepan. Cook for 5 minutes, then allow to steep for 30 minutes. Strain and allow to cool.
  3. Combine the sugar, allspice and ground cinnamon on a small plate. Use the lime wedge to moisten the rim of the glasses, then dip in the spiced sugar mixture.
  4. Working in 2 batches, in a shaker, combine half of the mezcal, lime juice, orange liqueur and egg white and 1 1/2 ounces of the chilled cider. Shake vigorously. Add ice and shake again. Strain into the rimmed glasses. Garnish each with a lime wheel and a dusting of ground cinnamon. Repeat with the second batch.

A delicious small drink; each serving totals 1-1/2 oz. of liquor. The cider reduction is enough for 8 batches. I think the reason for the smaller batches is that the egg whites really expand and fill the shaker, so it’s a matter of physics. nb: I used Fee Foam since it’s vegan and it worked very well.
