Ingredients
- 1 small, ripe honeydew melon
- 4 ounces tequila blanco
- 2 ounces melon liqueur, such as Midori
- 2 ounces fresh lime juice, plus lime wedges for rimming the glasses
- Kosher salt, for rimming the glasses
Instructions
- Peel and seed the melon. Puree the melon in a high-powered blender.
- Add 2 cups melon purée (save the remainder for another use), tequila, melon liqueur and lime juice to a pitcher or carafe. Place in the refrigerator to chill completely, about 1 hour. Alternatively, you can add all the ingredients to an extra-large cocktail shaker and shake with ice until chilled.
- Rub 4 rocks glasses with a lime wedge, then rim with salt and fill with ice.
- Remove the margarita mixture from the fridge and stir. Fill each glass, then serve.
