Green Melon Margarita

The subtle sweetness and unique flavor of green melon make the most delicious margarita. If serving for a summer party, this recipe can easily be doubled!

Ingredients

  1. 1 small, ripe honeydew melon
  2. 4 ounces tequila blanco
  3. 2 ounces melon liqueur, such as Midori
  4. 2 ounces fresh lime juice, plus lime wedges for rimming the glasses
  5. Kosher salt, for rimming the glasses

Instructions

  1. Peel and seed the melon. Puree the melon in a high-powered blender.
  2. Add 2 cups melon purée (save the remainder for another use), tequila, melon liqueur and lime juice to a pitcher or carafe. Place in the refrigerator to chill completely, about 1 hour. Alternatively, you can add all the ingredients to an extra-large cocktail shaker and shake with ice until chilled.
  3. Rub 4 rocks glasses with a lime wedge, then rim with salt and fill with ice.
  4. Remove the margarita mixture from the fridge and stir. Fill each glass, then serve.
