Ingredients
- 4 cups seedless watermelon chunks
- 1/2 English cucumber, peeled and coarsely chopped
- 1 lime, zested, plus juice of 1/2 lime, plus wedge for rimming glasses
- 1/4 cup course kosher salt
- 1 -ounce agave syrup or honey
- 3 ounces white tequila
Instructions
- Liquefy the watermelon and cucumber in a blender and strain through a fine mesh sieve into a pitcher. Refrigerate until ready to use.
- Mix the lime zest and salt on a small plate and reserve.
- When ready to serve:
- Mix 1/2 cup watermelon-cucumber juice with lime juice, agave and tequila in a cocktail shaker filled with ice; shake well to chill. Rub the rim of a martini glass with a lime wedge and dip it into the lime zest mixture. Pour the margarita into the salt-rimmed martini glass and enjoy!

Just ok…I like Claire’s recipes and her show and her cookbook is wonderful — I love the simplicity of 5 ingredients. This drink is wonderful if you like fruity cocktails — which I do not. I wanted to try it though because it’s so hot outside and it looked refreshing. And it is but it’s so very sweet; even with the cucumber. So I had one glass and then switched to my favorite drink: champagne. If you like sweet drinks, you will love this. If you don’t then I’d steer clear of this one!

Holy Moly these were great! So refreshing- the only change I made was I added a little bit of water-
This was so wonderful, refreshing. My only change that I made was using less cucumber so that the watermelon did not get over powered. My husband is not a tequila drinker so we made his with vodka. Yummy.
I made a small batch last nite, it was simple and delicious….loved the salted rim with the lime zest!!! didn’t need any sweetener though, it was good as is, and I used a freshly picked cucumber from my garden!!! thank you.
WOW. Such a refreshing cocktail I’ve made it twice. Everytime has been a big hit. Cool, sweet and suddle the tequila is sneaky. All I can say is WOW.
I just LOVE Claire’s show and many successes with other recipes from her. I was satisfied using super fresh ingredients to get the flavor but it lacked the flavor saturation a good maggie has. I didn’t use too much tequila but I could barely taste the sweetness of the watermelon and it was super ripe and sweet before I used it I may try making this again when it’s really hot in the summer!
