Layered Tiramisu Cake

This is a simplified version of the classic Italian dessert. Frozen pound cake replaces ladyfingers and cream cheese replaces mascarpone, making it an easy option if you can’t get fancy Italian ingredients at your local store. Just make sure you allow fridge time before you serve!

Ingredients

  1. One 16-ounce frozen pound cake, thawed
  2. 5 ounces hot strong coffee or espresso
  3. 2 tablespoon brown sugar
  4. 8 ounces cream cheese, at room temperature
  5. 1/2 cup powdered sugar, sifted
  6. 1 tablespoon vanilla bean paste
  7. 2 cups heavy cream
  8. 1 ounce semisweet baking chocolate

Instructions

  1. Remove the pound cake from its pan and line the pan with plastic wrap, leaving plenty of overhang. Slice the pound cake horizontally into 3 slices.
  2. Mix the hot coffee with the brown sugar in a small bowl until the sugar has dissolved. Set aside.
  3. Add the cream cheese, powdered sugar and vanilla bean paste to a large bowl. With a hand mixer, beat the mixture until smooth. Add the heavy cream and continue to beat until stiff peaks form. Transfer to a piping bag fitted with a wide tip and set aside.
  4. To build, place one layer of cake in the bottom of the lined pan and press. Spoon over a third of the sweetened coffee, allowing it to soak in. Pipe a third of the cream mixture over the cake. Grate over a third of the chocolate. Repeat the process 2 more times, ending with the grated chocolate. Loosely cover with the overhanging plastic wrap and chill for 4 hours.
  5. Carefully lift the cake from the pan and remove the plastic wrap. Slice and serve.

This had the perfect amount of sweetness and was a hit as a part of our italian themed Sunday dinner. I was looking for something easy this week and hit the jackpot! I’ll add more coffee syrup next time, but there are absolutely no complaints at my house after this one. Thanks, Ree!

The perfect dessert ! It was a hit at my Christmas Eve dinner party and I will be making it again! I messed up and ended up with extra so I used vanilla wafers and layered some in wine glasses! I ended up with three extra desserts exactly what I needed:)

I made this a little different. I used a boxed cake with yogurt to make it light. And I used mascarpone instead of cream cheese. It was good but I found that there wasn’t enough coffee flavor for me. I’ll use 8oz of coffee instead next time and try the cream cheese version. Thanks Ree!

Wasn’t as sweet as I would have hoped it would be. I know tiramisu isn’t a super sweet dessert, but I thought it might be in cake form. Was very easy to make though! Maybe I would add more powdered sugar and maybe more brown sugar next time???
