Ingredients

  1. 1 pound ground beef
  2. 1 pound ground turkey
  3. 1 cup shredded Cheddar cheese
  4. 1 cup plain bread crumbs
  5. ¾ cup shredded zucchini
  6. ½ cup diced onions
  7. ½ medium green bell pepper, diced
  8. 1 large egg
  9. 1 (1 ounce) package ranch dressing mix
  10. 1 teaspoon Worcestershire sauce
  11. ¼ cup ketchup
  12. ¼ cup steak sauce

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×13-inch baking dish.
  2. Mix ground beef, ground turkey, Cheddar cheese, bread crumbs, zucchini, onions, bell pepper, egg, ranch mix, and Worcestershire sauce in a large bowl until well combined. Form mixture into a loaf and place in the middle of the prepared baking dish.
  3. Stir ketchup and steak sauce together in a small bowl until well combined; pour over meatloaf.
  4. Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  5. Feel free to use any combination of meat for the ground beef and turkey, either based on your personal tastes or by what’s on sale at the supermarket.

I make this all the time. The only change I highly recommend is to split it into two loaves so it cooks all the way through. I find that one loaf is too big and is still raw in the middle when following the cook time in the recipe.

I followed the recipe almost exactly. I drained the zucchini super well for a couple of hours. I made the sauce for the top a tad bit differently because I already have a favorite meatloaf sauce recipe. The meatloaf turned out delicious. It was moist but not too wet and it had great flavor. People complaining it is too wet probably didn’t drain their zucchini well enough. I make a lot of different meatloafs and this one is probably one of my top 2 because it’s flavorful and it incorporates a lot of veggies.

I made this a day ahead to make sure the flavors had a day to blend. I also sauteed the onions, red peppers, and garlic ahead. Mixed everything and let it sit in a bowl for a day. Made it tonight and it was great. The meatloaf itself was solid, not crumbly. Held up. We really loved it. I did find it a tad salty. I am getting older and although I love seasoning, I find salt being a culprit. That might have been from the pork rinds I used in place of the bread crumbs.

As described it’s moist. Truthfully, it is watery. I grated only half a medium zucchini. The flavor is subtle as it all comes from the Ranch pkt. Don’t spoil by dousing with ketchup! This makes a pleasant change from tomato-y sweet glaze meatloaf. Some may find the recipe excessively salty. That could be adjusted by decreasing the powdered Ranch, and adding herbs for flavor instead. Look forward to eating leftovers the next day to see how flavors develop in the fridge — usually makes it better!

Amazing flavor and perfect consistency. For those who prefer less soggy meatloaf, shred the zucchini and let it drain in a strainer for a few hours to get rid of excess water.

I did not have bread crumbs handy and did not feel like using my food processor so I used a mix of Oatmeal and corn flake crumbs for the binder. I also did not read the instructions all the way, so rather than putting the mix of ketchup and steak sauce on top, I mixed it into the meat. Quite tasty.

This recipe is great. I modified it to alleviate the breadcrumbs. I crushed up some pork rinds (0 carbs) to replace the breadcrumbs and added a 1/2 cup of dried vegetable flakes. I also substituted the ranch dip with 1/2 c ranch dressing. The last time I made it I used 1/2 c onion dressing it was great.

this was a hit! very good. followed almost literally, but eased upon dressing mix (I don’t like things too salty). next time will use full packet. also, owing to type 2 diabetes, I used almond flour in place of breadcrumbs, and it worked beautifully.

I’ve made this numerous times and delish!! Nice and moist. The last time I made it, I used ketchup and some bold bbq sauce and was yummy. I like trying different topping. The zucchini makes it moist.

Well, I didn’t have any ground beef or ranch seasoning. So I used ranch dressing and extra bread crumbs. It has to have the ground beef for a better texture. It was just to soft and mushy. I cooked extra time. Then just slices and fryed slices to get it dryer in texture. I will try it again when I have correct ingredients.

I,ve made many a meatloaf, but this one is overall the best! Great flavor and it holds together nicely, easy to slice, especially for meatball sandwiches the next day! I only made two minor substitutions…used red pepper instead of green and used BBQ sauce instead of ketchup. Thanks for my new favorite meatloaf recipe!
