These potatoes are delicious and a perennial favorite. These are something I’ve been cooking for years; they’re fantastic as a side dish for any meal and taste great warmed up the next day for lunch.

Ingredients
- 2 pounds ground veal
- 1 cup Italian seasoned bread crumbs
- 1 egg, beaten
- ⅓ cup shredded baby carrots
- 1 cup ketchup
- 1 tablespoon chopped garlic
- ½ cup chopped onion
- 1 teaspoon salt
- 1 teaspoon dried parsley
- ½ teaspoon chili powder
- ½ teaspoon ground black pepper
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a bowl, mix the veal, bread crumbs, egg, baby carrots, 1/2 cup ketchup, garlic, and onion. Season with salt, parsley, chili powder, and pepper. Transfer to an 8×8 inch pan, and form into a loaf shape. Top with remaining ketchup.
- Cover, and bake 45 minutes in the preheated oven. Remove cover, and continue baking 15 minutes, or to an internal temperature of 160 degrees F (70 degrees C). Let sit 10 minutes before serving.

Very good. I wanted a recipe using ground veal and found this. I wasn’t sure about the fat content as opposed to the 80/20 chuck I use for meatloaf. This is similar to a recipe I have for that. It turned out great. Mine called for a small can of tomato sauce mixed with 2tbsp. of A-1 which I used in place of the ketchup. I didn’t have a carrot (which mine calls for too) but I figured the chili powder may replace that as I think it’s for sweetness. The chili powder wasn’t noticeable but…the meatloaf sure was good! It was moist and flavorful and saved for future use. Thanks!
It’s a great recipe, although I did make some changes. I used half veal-half turkey, and leek instead of onion. I used the chopped frozen parsley I keep in the freezer. Next time I’ll use onion, but had the leek and wanted to try it.
No, not “Yummy”. Awesome! Best meatloaf we ever had. Didn’t have carrots, so added some peas and celery. Sauteed onions and garlic slightly before adding to mix. And used a 50% ketchup and 50% BBQ sauce mix (my favorite 4Rivers BBQ sauce from Orlando). Will make again and can’t wait for leftovers.
Loved it! I usually make all recipes as written the first time but my grocery store did not have plain ground veal so I made it with meatloaf mix. Wow! It will be greater even still with straight veal. Don’t change a thing.
I used venison instead of veal and it was excellent. It set up well, was dense and cut nice and firm, making it excellent for sandwiches for leftovers the next day. The carrots made it moist. I added some finely chopped jalapenos for a little heat and mixed some spicy BBQ sauce with the ketchup. My husband and I definitely thought it was probably the best meatloaf I have ever made. YUMMY for sure!

I didn’t follow the recipe as written so I didn’t rate it 5 stars. I followed suggestion from other reviews. I had a pound of veal and 1/4 lb of ground sirloin. I sautéed the garlic, onion and shredded carrots ( I had no celery). I only used an1/4 c of diced onion because I also used Onion Recipe Dip as suggested in another review. ) Used our favorite BBQ sauce instead of ketchup because my daughter hates ketchup. Other than these changes, I did what the recipe called for. I used a cast iron loaf pan lined with nonstick foil. I followed the temperature and time set. It came out really good and moist and tender. This is how I am going to make meatloaf from now on.
fantastic! everyone loved it kids ate a bunch. I added celery. had plain bread crumbs so I added seasoning. it’s cooking, you can modify as needed. great flavor. will make again!

I followed the recipe exactly and it was excellent. The texture is much softer than a traditional meatloaf. Flavor was perfect.

Great change to regular beef meatloaf! I used 1.5lb veal and 1lb beef and followed everything else to the letter! Beautiful tasting and great stability when cutting slices for sandwiches. The next time I use this recipe, I’ll only be changing the temp to 350 for a little more moisture otherwise awesome!

I used meatloaf mix (beef/pork/veal) and added more garlic and onions to satisfy requests from the dinner table. It was delicious and loved by all!

it was tasty. I also add on sausage link to the mix and sauteed the onions and carrots and garlic before adding it to the mix as well as some oregano.
This recipe was very good, I will make again and my 2 and 4 year olds cleaned their plates, I pretty much followed the recipe but didn’t use chili powder used lawrey’s seasoning season instead

Hubby liked it. While it was certainly edible, I feel it lacked flavor, and I followed the recipe to a T. So next time I make it, I will be adding some extra spices to try and give it more kick. The ketchup certainly worked to give it a lot of moistness though!
This meatloaf was amazing! I hardly ever make meatloaf, but I will make this more often because my whole family (hubby, kids 5 and 7) really liked it. I made it as directed, except for substituting chili sauce for the ketchup that was baked in, because I happened to have chili sauce to use up. I served it with roasted garlic and cauliflower and wild rice. Yum!
I tried this last night and it was a hit!! My husband said this was “the best meal I’ve ever made.” I changed the serving to 4 and used only 1 pound of meat and also did not add the carrots or chili powder. Still very good!!!.
