This tasty snack will appeal to fans of salmon and non-traditional cheese balls. Instead of parsley, almonds can be finely chopped and used for rolling.

Ingredients

  1. 1 pound ground beef
  2. 3 cups cooked rice
  3. 1 red bell pepper, chopped
  4. 1 orange bell pepper, chopped
  5. 1 green bell pepper, chopped
  6. 2 cups tomato sauce
  7. ½ cup brown sugar
  8. 8 ounces shredded Cheddar cheese

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Heat a large skillet over medium-high heat. Break ground beef into pieces and add to skillet; cook and stir until about half of the beef is browned, 3 to 5 minutes. Stir red bell pepper, orange bell pepper, and green bell pepper into the beef; continue to cook and stir until the beef is entirely browned, about 5 minutes more. Drain and discard grease.
  3. Mix tomato sauce and brown sugar together in a bowl; pour over the beef mixture. Stir rice into the beef mixture and stir; transfer to a 9×13-inch baking dish. Sprinkle Cheddar cheese over the mixture.
  4. Bake in preheated oven until the cheese is bubbling, about 30 minutes. Cool dish 5 minutes before serving.

This is a fantastic base recipe! 4 stars as is and 5 stars with my changes/additions. It was a bit on the sweet side and I prefer savory so next time I will probably cut the brown sugar in half. I used brown rice and added a whole onion and 4-5 stalks of chopped celery to the mixture for more flavor and vitamins. I also took the advice of some other reviewers and added my usual go to spices, garlic, season salt, parsley and as suggested, a bit of chili powder. I think I will try Montreal Steak Seasoning next time as well. Definitely a better way to serve to kids and get them to eat their vegetables. I’ll keep this in my regular rotation for sure.

I read other reviews and made changes. I used ground turkey, replaced a cup of tomato sauce with El Pato hot tomato sauce, added italian seasoning and used brown rice quinoa combination. It was delicious

Loved the concept of deconstruction of basic stuffed peppers. A few slight modifications to base recipe Used chopped tomatoes in sauce, Added shredded carrots, some oregano, chili powder, salt and pepper to taste and a splash of saracha for a little depth of flavor. Also only used 1/4 c brown sugar. This got rave reviews from the family!! Can’t tell you how it saves as there was nothing to save and there were only 4 adults. A very simple dinner that just said comfort food. Will look forward to making again and freezing half.

Left out the sugar because that didn’t appeal at all; subbed tomato sauce with drained canned diced tomatoes and spaghetti sauce. We all loved it. I made a separate recipe of it in a vegetarian version by subbing black beans for the meat. I’ll be making this one again and again.

Waaaayyyy too much sugar… and the meat dried up a bit. Not sure, but definitely needs LESS sugar (and I normally love sugar!)

The family loved it! It was very tasty and filling. I didn’t have all of the ingredients and had to substitute sausage for the ground beef, and salsa for the tomato sauce, but it turned out delicious.

Really good base. But, I also added chopped onions to chopped green peppers. Then, I added a can of diced tomatoes with chilies. I used the brown sugar blend with stevia, instead. I will make again.

Made a few changes, and it was DELICIOUS! 1- Make sure you SALT YOUR RICE WATER. This recipe definitely needs more seasoning than listed. 2- Added onions cut in 1/2 in strips. I didn’t want to add raw veggies straight to the oven, so I stir fried the onions and peppers (1/2 in cubes) until the onions were translucent with olive oil, salt, pepper, and two whole cloves of garlic (smashed to release flavor) 3- Used 2.5 cups of tomato sauce and only 1/4 cup of brown sugar. Seasoned with salt, pepper, parsley, and oregano. I simmered the sauce in a med. pot for 5-10 minutes to allow the seasoning to cook in. Then I heated my ground beef in the sauce (I brown and freeze ground beef in bulk). 4- Only cooked in the oven for about 20-25 minutes. This was such a good recipe. It reminded my roommates and I of home. Definitely a soul-food recipe. 🙂

I had leftover steamed white rice from Chinese takeout and some bell peppers in the fridge. Decided to make this. It turned out great. I doubled the tomato sauce (it just looked dry) and omitted the brown sugar as sweetness didn’t seem to go with this savory dish. Hubs and I loved it and was easier to make and easier to eat than stuffed peppers

This is the best thing I have eaten in ages. The only changes I made was to add onion and a can of tomatoes. I also cut the recipe in half. I intended to have it one night and freeze the rest. I ate it 3 days in a row. I couldn’t stop eating it and I plan to make it again next week!!

Added a can of diced tomatoes (didn’t have any fresh ones that were ripe), but it ended up being a bit soupy. Tasted great, though—much easier to eat than actual stuffed peppers—at least for the kids. Also added banana peppers.

I added some chopped onions to the meat as it cooked, added some petite diced tomatoes to the tomato sauce, and used 1/3 cup of brown sugar. It was perfect. My wife doesn’t like stuffed peppers, but said this was a keeper.

Too sweet and too bland. I had already added all the brown sugar by the time I read the reviews, so I also added some taco seasoning and crushed red peppers. That kicked it up a notch, but I think it definitely needs way less sugar and more spices or some chopped onion cooked with the meat.
