Two-Ingredient Dough Teriyaki Chicken Flatbreads

To make a delicious hot lunch at the end of the day, create these simple crockpot meatballs. Serve with hot, prepared spaghetti.

Ingredients

  1. cooking spray
  2. 1 ½ cups self-rising flour, plus more for kneading
  3. 1 cup whole-milk plain Greek yogurt
  4. 2 teaspoons olive oil
  5. ½ medium red onion, thinly sliced
  6. 1 tablespoon olive oil
  7. 3 fluid ounces thick teriyaki sauce
  8. 1 cup cooked and shredded chicken breast meat
  9. ¾ cup shredded mozzarella cheese
  10. 2 teaspoons chopped fresh cilantro (Optional)

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C). Lightly spray a baking sheet with cooking spray and set aside.
  2. Mix flour and yogurt in a bowl; dough will be crumbly. Transfer dough to a lightly-floured work surface. Knead dough until smooth, 5 to 7 minutes, adding more flour if too sticky. Cut dough in half and form into balls.
  3. Flatten each dough ball with the palm of your hand, stretching and pulling until it is 1/4 inch thick (very thin). You also can roll out the dough with a rolling pin if that’s easier for you. Shape the dough into two long ovals.
  4. Transfer the dough to the prepared baking sheet, prick using the tines of a fork, and brush with 1 tablespoon olive oil.
  5. Bake in the preheated oven for 3 minutes. Remove and leave the oven on.
  6. Meanwhile, heat 2 teaspoons olive oil in a medium skillet over medium heat; add onion slices, and cook for 3 minutes.
  7. Spread the crusts with the teriyaki sauce leaving a 1/2-inch border all around the edges. Top with the chicken, onions, and mozzarella cheese.
  8. Return to the oven and bake until the crusts and toppings are browned to your liking, 9 to 11 minutes.
  9. Remove from the oven and garnish with cilantro. Slice and serve immediately.

We did not make the dough, so I can only comment on the chicken portion. This was very easy and tasty, we added it to flat bread we already had. I hope to make the flat bread next time!

I would give this 10 stars if I could! It is so easy to make and my family really enjoyed every bite!! I actually used nonfat Greek yogurt. Still was amazing. Definitely keeping this in my meal rotation!!

This two ingredient dough makes for an impressive flatbread base. The only change I made was to use white onions instead of the red which made no difference with the teriyaki and chicken combination. It made for an easy and tasty lunch which everyone enjoyed. I plan to use this flatbread base for other combinations as well as it was quick and easy.

Absolutely excellent! This dough called for 1.5 cup self rising flour. It made the dough easier to work with and get ready for baking. I like the higher anoint of flour. The teriyaki sauce with the chicken is an excellent choice whether for a supper or a get together with family. Very easy to make. Not a lot of extra prep to get to be ready to bake. This is on my list to make again!
