Ingredients
- 1 (8 ounce) package penne pasta
- 1 tablespoon basil oil
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 pint grape tomatoes, halved
- 1 cup shredded pepper Jack cheese
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 tablespoon minced fresh basil
Instructions
- Bring a large pot of water to a rolling boil over high heat. Cook pasta in boiling water until cooked through but still firm to the bite, about 10 minutes. Drain and set aside.
- Heat both oils in a large skillet over medium-high heat. Add garlic and cook until soft, 1 to 2 minutes. Add tomatoes, reduce heat to medium, and simmer for 10 minutes. Stir in pepper Jack, mozzarella, and Parmesan cheese. When cheese begins to melt, mix in cooked penne pasta. Season with fresh basil.

It was very good as written. Though the store brand of shredded cheese (Mozzarella and Pepper Jack) did not melt and blend well. I grated my own Parmesan after I plated it and it was still very tasty. A little chicken or Italian sausage for some protein next time.
First, let me say, I used the recipe as a guide only. I didn’t use fresh tomatoes because I didn’t have any; instead, I used 1 can of Diced Tomatoes. To create a sauce with the simmering tomatoes, I added Red Wine…and, if needed, water from the cooked pasta; oh, I added Red Pepper Flakes for a bit of spice. Finally, I mixed the cheeses into the pasta and sauce, and BROILED it until slightly brown..and finished it with a drizzle of Basil Infused Olive Oil (any Olive Oil would do). This was really a good dish. I am able to usually just look at a recipe, and know what I want to add (or subtract). So, to be fair, I must say, that following the recipe AS IS would have probably been just as good.l; I just preferred to make it my own. Thank you for sharing!
My husband does not want to eat meat anymore, so I found this recipe and made it, he said he couldn’t tell that it didn’t have meat. I used a can of Rotel tomatoes, and a small can of tomato sauce, a 3 cheese italian cheese mix and I cooked some fresh spinach in a little olive oil and season blend vegetables and added to the penne pasta. I also added garlic knots bread and steamed butternut squash! My husband really enjoyed his meatless meal! Sorry forgot to take a picture!
Penni pasta is very tasty
I made my own basil oil with fresh basil from my garden. Was hoping it would have a stronger flavor than it did, but with the fresh basil on top, this was a great dish. Quick and easy to put together. I added some shredded cooked chicken with the cheese.
Made this tonight and it turned out really good! I didn’t have many tomatoes so I used what I had along with a can of fire roasted tomatoes. I used mozzarella and Italian cheeses along with fresh basil from our garden.
I added 2c of fresh spinach 2 grilled & diced chicken breasts to make the meal more comprehensive and well rounded. My entire family said it was a win!! That never happens!
Missing 2 ingredients, onion and bell pepper and lightly salt the tomato sauce. Then you will have what is an Italian masterpiece!
I was given several packets of a high fiber Penne pasta and wanted something SO quick I’d get whiplash to make. This was it. I needed the flavor boost to help with the strong bite of the pasta.

I read the reviews and must agree, use only 1/2 of all the cheese. I also used 3 tblsp of olive oil and 1 tblsp of dried basil. It was delicious.
Great recipe, used a rotisserie chicken, added the extra chicken broth and 1 cup white wine…some red pepper flakes, and let it cook down….at end, thickens the broth a little bit…so very good..
This recipe was delicious with a couple modifications. Didn’t have any fresh basil so I added some dry basil to my olive oil and added a little pesto. I used 1/2 cup of chicken broth to tomato’s when simmering. Added in some spinach, chicken and crushed red pepper

I really enjoyed this recipe. This is the second time I’ve made it. The first time was a long time ago, but I remembered that I just used mozzarella since I don’t have a high tolerance for spice. This time, I made it as written and it tasted really good. My husband wasn’t really hungry, but went and got a bowl for himself after trying a bite of mine, which is a win. Definitely going to keep this in the rotation.
I did not have grape tomatoes so I used canned diced. I also unfortunately had to sub dried basil for fresh. It turned out great! I would definitely make it again.
