Prep Time: 15 mins
Cook Time: 15 mins
Total Time: 30 mins
Servings: 4
Yield: 4 black bean burgers

Ingredients

  1. 2 (15 ounce) cans black beans, rinsed and drained
  2. 1 ½ teaspoons grapeseed oil, or as needed
  3. 1 medium shallot, chopped
  4. ½ medium green pepper, chopped
  5. 4 cloves garlic, minced
  6. 3 sprigs fresh basil, chopped
  7. 1 ½ teaspoons ground cumin
  8. 1 ½ teaspoons ground coriander
  9. 1 ½ teaspoons smoked paprika
  10. salt and ground black pepper to taste
  11. 2 large eggs, beaten
  12. 1 cup bread crumbs

Instructions

  1. Mash black beans in a bowl with a potato masher, leaving a few beans whole for texture; set aside.
  2. Heat oil in a cast iron skillet over medium heat. Add shallot, bell pepper, and garlic. Cook and stir until vegetables have softened, 3 to 5 minutes. Add to black beans and season with basil, cumin, coriander, paprika, salt, and pepper.
  3. Fold beaten eggs into the bean mixture. Sprinkle in bread crumbs, adding a little at a time and fold in. Be careful not to overmix the bean mixture.
  4. Reheat the skillet that you cooked the onion mixture in. Scoop out 1 cup bean mixture and shape into a ball. Set the ball into the hot skillet and gently flatten to form a burger.
  5. Cook until firm and lightly browned, 5 to 7 minutes per side. Repeat with remaining bean mixture. You might need to add more oil.
  6. I made my own bread crumbs by grinding brioche toast in a food processor.

I have to agree that this is the best! I threw them in the air fryer since it is still new for me and they were fully warmed and crispy.

This is a really tasty recipe. One cup of the mixture makes a really big burger. I will use 1/2 cup next time. I’ll probably use the whole green pepper next time as well. I will be making this again.
