Thanksgiving Leftovers Stuffed Shells

Ingredients

  1. 1 (12 ounce) box jumbo pasta shells
  2. 2 cups cubed cooked turkey
  3. 1 ½ cups leftover stuffing
  4. 1 (4 ounce) package cream cheese, softened
  5. ½ cup Parmesan cheese
  6. ⅓ cup mayonnaise
  7. 4 cups shredded mozzarella cheese
  8. 1 ½ cups leftover turkey gravy

Instructions

  1. Preheat an oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
  2. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the shell pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 13 minutes. Drain well in a colander set in the sink.
  3. Place turkey and stuffing in food processor, and pulse until finely ground and combined. Place the ground turkey and stuffing mixture in the bowl of a stand mixer along with the cream cheese, Parmesan cheese, mayonnaise, and 2 cups of the mozzarella. Mix with paddle attachment on medium-low until well blended.
  4. Spread 1/2 cup of gravy on the bottom of the prepared dish. Stuff the pre-cooked pasta shells with the turkey mixture and place in the dish in tight rows. Top with the remaining gravy and the remaining 2 cups of mozzarella cheese.
  5. Bake, covered, for 45 minutes. Uncover and cook for an additional 10 minutes until top is browned and bubbly. Allow to cool for 5 minutes before serving.
  6. 1 – 6 ounce package of prepared instant stuffing mix can be used in place of leftover stuffing and 1 – 10.75 ounce can of cream of chicken soup can be used in place of leftover gravy.

I’ve made these shells two or three times now. I can only manage maybe one open-faced turkey sandwich after Thanksgiving, so I make these and put a few pans in the freezer for another day. They’re awesome! My husband loves them so much he bragged to his co-workers and promised to take a pan to them for lunch. Unfortunately I only had one little pan left as we had already devoured the two larger pans, so now they’ll have to wait until we have another turkey (not this year!) I never have enough gravy left over, so I just use whatever packets or jar I might have on hand. It doesn’t matter what flavor gravy, it’s always good!

This is a great recipe for leftover turkey! In fact, it’s the best we’ve ever made and I plan to save it for each turkey dinner in the future. We just shared a turkey dinner at our daughter’s house and, while cleaning up, I told her about this and how good it is so now I have to sign off here as I promised to e-mail it to her asap. Made this again after Christmas and it’s still a hit. Used stove top stuffing and a package of gravy mix because I didn’t have enough leftovers of either. Also used cannelloni shells and as another reviewer suggested, I added a can of cream of mushroom soup to the base, and added a bit into the gravy on top. You can’t even tell it’s there! It was really good, everyone liked it a lot. It got better reviews than the enchiladas I made!

Other commenters suggested not to use a food processor — I agree. Just chop and don’t over mix for a nice texture. Leftover gravy?!! Never at my house. If you need to use gravy in a jar, be sure and add spices to it to insure great flavor. This was delicious. Maybe it’s just me, but it always takes me a lot longer to prep any recipe than it says it should.

Like others I was skeptical but I was wanted to try something different. We were pleasantly surprised on how good this turned out. Like others I didn’t process the turkey and stuffing just mixed them right in. I also cut back on the mozzarella to one cup at the end. The dish was hearty and delious.

OMG!!! This was awesome! I didn’t have enough gravy, so I used the little bit of gravy I had on the bottom of the pan and Cream of Mushroom soup on top. It would have been even more awesome with all gravy! Definitely keeping this for all future holiday leftovers.

This turned out delicious! I made as exact but added my leftover mashed potatoes as well probably about a cup worth and it was great. My family loved it and they’re not crazy about turkey especially after so many leftover nights…it was just hidden enough. Thanks for sharing idea it was a hit!

Followed the recipe exactly as written. I really didn’t like it, my husband said it was okay. Very bland, probably would have been better if I made a turkey manicotti with the shells, using ricotta cheese and omitting the stuffing. I just really didn’t care for this, won’t even tweek it to make it better, sorry for the bad review, just my opinion.
