Ingredients
- 1 pound lean ground beef
- 8 ounces macaroni
- ½ cup chopped onion
- 1 (10.75 ounce) can condensed tomato soup
- 1 (14.5 ounce) can diced tomatoes
- 1 (1.25 ounce) package taco seasoning mix
- 2 ounces shredded Cheddar cheese
- 2 ounces shredded Monterey Jack cheese
- 1 cup crushed tortilla chips
- ½ cup sour cream (Optional)
- ¼ cup chopped green onions
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Cook pasta in a large pot of boiling water until al dente. Drain.
- In a large skillet, cook and stir ground beef and chopped onion over medium heat until brown. Mix in tomato soup, diced tomatoes, and taco seasoning mix. Stir in pasta.
- Spoon beef mixture into a 9×13 inch baking dish. Sprinkle crumbled taco chips and grated cheese on top.
- Bake for 30 to 35 minutes, until the cheese is melted. Serve with chopped green onions and sour cream, if desired.

I found this recipe extremely easy to make, unfortunately I left it in the oven a little too long, but the flavor was awesome, especially with some sour cream on it. This is a keeper, will be making this one again.

This was such a big hit. My guys are not big fans with casseroles so I am rather picky on the ones I serve. They loved it. That particular day I had canned some diced tomatoes with poblano peppers so I used some with this dish. They both said they wanted to have it again. That is a very high recommendation.
I liked it, but it came out very dry. Needs some extra soup or tomato sauce or something to help keep it moist.
The cook time was way off. I don’t like to hover so when I see 30-35 min I set it for 30 and check it out as my oven is typically on the money with temps and cook times. The entire top turned into like a cheese crisp. It wasn’t bad but I needed to add additional cheese to the food after it was cooked. Cook time is probably closer to 15-20 min since you are just melting the cheese. I should have upped the cheese and mixed some throughout the mixture before baking. I would also suggest cooking the taco seasoning into the beef before you add the soup and tomatoes. The seasoning got a little lost just mixing in with soup and tomatoes also. I will add black beans and corn next time also.
Was very delicious. But next time I think I will add refried beans. Instead of sour cream I used unflavored great yogurt.
I Sautéed 2 spring onions and small yellow onion, a half a green pepper and chopped 2 stocks of celery, two pkg of taco seasoning, Tbsp red pepper flakes, and lastly I double the meat. As u can see they dug in before I could plate it. Plated with a Dollop with tsp sour cream and diced a few banana peppers for garnish an extra flavor. Pretty good.
I added a can of mushrooms instead of the onion and diced tomatos. and let each person put there own zesty taco chip bits on after it was baked so that they dont get soggy…. found it didnt even really need the sour cream! was so yummy
I left the pasta out. Man, I love this. I could eat this every day for a week…and I made enough that might be able to.
This was great! I used Original Rotel instead of just diced tomatoes, so it had a bit more flavor. Very tasty!
Read many reviews and used what sounded like the best tweaks. 14 oz can of diced tomatoes with green chiles (reserved the liquid to use for the taco seasoning mix) 4 oz can of diced green chiles (reserved the liquid to use for the taco seasoning mix) 14 oz can of black beans (well drained) 1 cup of salsa omitted the tomato soup but used the onion, ground beef and pasta as stated. Was AMAZING! Our 14 year old turned his nose up at it but then devoured 3 helpings! Definitely a new favorite for us!

Omitted the onions and used onion beef soup pack instead. Also used 1 pound ground Turkey with 1 pound ground beef. I used crunched taco shells intead of chips. Everything else remained the same. I will def make this again!
My family loved this tonight. I did make a few changes, I added minced garlic to the meat along with some cumin. Then I used a can of Rotel because I don’t have any tomato soup in the house, and a small can of diced green chilies and a can of red beans. I also mixed cheese into the mixture and sprinkled cheese to the top and then topped it off with crumbled tortilla chips. It was really good and a big hit with my teenage boys.
I used a can of Rotel (tomatoes with diced chiles) instead of just diced tomatoes. It was tasty…good heat. I also used 2 lbs hamburger and cooked it as I would taco meat before adding the tomato soup, etc. The chips and cheese were a bit too chewy. maybe skip chips
This wasn’t that great. I made a lot of changes to the recipe. We do NOT used canned soups in this house so I just added tomato sauce, for one thing. I added some colorful chopped peppers, as well.
Delicious! I used Mexican shredded cheese blend and added half of the cheese to the beef mixture before putting it in the pan. I also added about half a jar of spaghetti sauce to the beef mixture since we like our sauce.
Best Mexican dish I made. Served with a salad and garlic bread. It was delicious
It’s was good with my modifications. The serving amount I thought was way off I’m from Texas, one pound of hamburger is not enough meat for 10 servings. So I doubled this for my family of 5 adults & a couple plates of leftovers for lunch tomorrow.
