Syrian Rice with Meat

The holidays are a terrific time to bake these no-roll sugar cookies. Kids enjoy making the biscuits into balls and dipping them in the sprinkles!

Ingredients

  1. ¼ cup butter
  2. 2 pounds ground beef
  3. 2 teaspoons salt
  4. ½ teaspoon ground allspice
  5. ½ teaspoon ground cinnamon
  6. ½ teaspoon ground black pepper
  7. 4 ½ cups chicken broth
  8. 2 cups long grain white rice
  9. 2 tablespoons butter
  10. ½ cup pine nuts

Instructions

  1. Heat 1/4 cup butter in a large saucepan over medium-high heat. Add ground beef and season with salt, allspice, cinnamon, and black pepper. Cook and stir until beef is browned and crumbly, 7 to 10 minutes.
  2. Stir chicken broth and rice into beef in the saucepan; bring to a boil. Reduce heat to low, cover, and cook until liquid is absorbed, about 20 minutes.
  3. Meanwhile, melt 2 tablespoons butter in a small skillet over medium heat. Cook and stir pine nuts in hot butter until lightly browned, 3 to 5 minutes.
  4. Mix pine nuts into beef-rice mixture before serving.
  5. You can use lamb instead of ground beef.

This is a very satisfying rice dish. I add about 1/2.c. of peas ● & carrots □ just for colour. I noticed some saying their rice was mushy….try leaving it on the stove after u think its done WITH the lid on, stove off. Let it sit for about 15 min.,before you take the lid off again. It will help dry your rice out & be fluffy.

Good, easy recipe. Used the rice that I have, which takes 30 min and 5 cups of liquid for this amount of rice, so just added 1 cup of water in addition to the broth, cooked an extra 10 minutes and that was fine. Omitted pine nuts as I didn’t have them and added some thawed frozen peas at the end, just stirred in to warm, in order to make it a one pot-meal. Thanks, I’ll definitely make it again.

This is delicious and very easy to make. I garnished it with slivered almonds and currants the first time I made it. Tonight I’m using 1/2 ground lamb and 1/2 ground beef and adding pinenuts.

My grandmother (Sittu) made this every year for Thanksgiving – we called it rice dressing.
