Sweet and Tangy Pulled Chicken Sandwiches

I made this purely out of a need for a sweet dinner and some kitchen tinkering. My family and friends adore it! can be paired with mac and cheese, vegetables, or fries.

Ingredients

  1. 2 pounds skinless, boneless chicken breast
  2. 1 (12 fluid ounce) can or bottle cola-flavored carbonated beverage (such as Coca-Cola®)
  3. 1 ½ cups barbeque sauce
  4. ½ cup raspberry walnut vinaigrette
  5. ¼ cup light brown sugar
  6. 3 tablespoons honey
  7. 2 tablespoons teriyaki marinade (such as Kikkoman®)
  8. ½ teaspoon ground cardamom
  9. ¼ cup mayonnaise, or to taste
  10. 8 medium hamburger buns, split

Instructions

  1. Place chicken in a slow cooker and pour cola-flavored beverage around it. Turn slow cooker to High and cook for 3 hours.
  2. Meanwhile, mix barbecue sauce, vinaigrette, brown sugar, honey, teriyaki marinade, and cardamom in a mixing bowl until well blended. Place in the refrigerator.
  3. After 3 hours, remove chicken from the slow cooker and shred. Set aside 1/2 cup of the cooking juices and discard the rest.
  4. Return chicken and 1/2 cup juice to the slow cooker; stir to combine. Remove barbecue sauce from the refrigerator and pour and blend it into the chicken. Cook for 1 more hour.
  5. Spread mayonnaise on hamburger buns and fill with pulled chicken and sauce.
  6. For a thicker sauce, use Sweet Baby Ray’s(R) Original.
  7. To make as an appetizer, serve on slider buns.

I didn’t use cardamom, but all of the other stuff came together nicely
