Ingredients

  1. 1 (8 ounce) package penne pasta
  2. 2 tablespoons olive oil
  3. ½ cup chopped onion
  4. 1 clove garlic, minced
  5. 3 cups chopped tomatoes
  6. 1 cup sliced fresh mushrooms
  7. 2 cups spinach leaves, packed
  8. salt and pepper to taste
  9. 1 pinch red pepper flakes
  10. 8 ounces feta cheese, crumbled

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente; drain.
  2. Meanwhile, heat olive oil in a large skillet over medium-high heat; add onion and garlic, and cook until golden brown. Mix in tomatoes, mushrooms, and spinach. Season with salt, pepper, and red pepper flakes. Cook 2 minutes more, until tomatoes are heated through and spinach is wilted. Reduce heat to medium, stir in pasta and feta cheese, and cook until heated through.

This is an AMAZING meal. I did add chicken breast chunks to make it more heartier, changed the chopped tomatoes to sliced sundried tomatoes, took out the mushrooms since my kids don’t like them and added onion powder and garlic powder for extra flavour. Everyone in the house loves it and I now make it regularly.

4 1/2 stars. I increased the garlic and spinach, otherwise made the recipe as written. I think this would also be good with a protein added, like chicken for a main course. Pepperoni or salami might be a nice addition also.

Like others, I used canned tomatoes, more garlic and added the spinach (and some sun-dried tomatoes) right before serving. My husband asked that we have it at least once a week; so that’s definitely worth 5 stars.

This is really good. I made it exactly as written except that my husband is allergic to garlic, so I had to leave that out. That left it a little less than “wow”; so I added a good dose of basil and an equal amount of oregano. After that, it was excellent! great as a leftover also.

I didn’t have Penne but used a tricolor pasta and added a few extra vegetables and a cut up chicken breast. This came out delicious and plentiful for lunches for the week too! I would certainly make it again.

I found this recipe on this app about 5 years ago and it has been a staple in my home since. I make it to the T except I add more garlic because..well, garlic is delicious. Tonight, I decided to add some protein to satisfy my husband. I used two chicken tenderloins (skinless/boneless) that I cut into strips/cubes. I salted and peppered the chicken and sautéed it in a small skillet with 3 tablespoons of butter for about 10 minutes (until juices ran and chicken was cooked). I tossed that in the pan at the same time as the tomatoes, mushrooms and spinach. After 5 years of making this dish as the recipe states, the added chicken made such an impact that I FINALLY felt compelled to leave a review. I don’t review dishes on here. I just use them. But this addition to this recipe made such a world of a difference that I felt compelled to share it with you. Thanks, Suki, for the wonderful recipe that has filled my family’s belly many, many times!! Delicious!!!

Super tasty!!! I made the recipe as it said. Ok. Well. I added more mushroom and more spinach than it called for and since my hubby loves his protein I cooked some shrimp in the pan before adding the pasta and feta. Will be making this time and time again. Loved how the feta melted slightly giving it a creamy base. Thank you for the recipe! A new go to fast supper!!

I made this last night and it was so good! I did substitute a few things for what I had. Tuscan olive oil, portobello mushrooms, green onions. added fresh parmesan and 2 extra cloves of garlic.
