Spicy Pulled Pork

Ingredients

  1. ½ cup all-purpose flour
  2. 1 teaspoon chili powder
  3. 1 teaspoon paprika
  4. 1 teaspoon cumin
  5. 1 teaspoon adobo seasoning
  6. ½ teaspoon cayenne pepper
  7. 1 (4 pound) pork loin roast, cut into pieces
  8. 1 tablespoon butter
  9. 2 onions, chopped
  10. 2 cloves garlic, minced, or more to taste
  11. 1 (14.5 ounce) can diced tomatoes
  12. ¾ cup barbeque sauce
  13. ¼ cup brown sugar
  14. 3 tablespoons hot pepper sauce

Instructions

  1. Mix together flour, chili powder, paprika, cumin, adobo seasoning, and cayenne pepper in a large bowl. Add pork; toss to coat.
  2. Melt butter in a large skillet over medium heat; cook pork in batches in hot butter until browned on all sides, about 10 minutes. Transfer browned pork to a slow cooker.
  3. Make sauce: Cook and stir onion and garlic in the same skillet over medium heat until fragrant, about 1 minute. Stir in tomatoes, barbecue sauce, brown sugar, and hot sauce; simmer for 5 minutes. Pour sauce over pork.
  4. Cook on Low for 5 to 6 hours. Transfer pork to a plate and shred with 2 forks. Return shredded pork to the slow cooker and stir to coat with sauce. Continue to cook, uncovered, until thickened, 10 to 15 minutes.

I wanted to go a little lighter on the heat so I substituted Red Pepper Flakes for Cayenne Pepper. Turned out great.

Didn’t take to long getting all together and browning outside. 30-45 min with sauce time. Before tossing in crock pot. Everyone loved it. Cooked side by side with another. So family taste tested and approved recipe is a keeper.

This is probably the best pulled pork I’ve had and I have made a few! I had a 7 lb. pork shoulder to use,cooked it using 1 box of unsalted chicken stock in slow cooker. I used the spice rub minus the flour searing it on all sides per instructions for 8 hours on high. We used Dave’s bbq sauce from this site(warm)on the side. Pork was delicious with sauce only the top of the sandwiches. Best spice rub ever!

This was tasty. I didn’t find this very spicy at all and I am a spice wimp most of the time. Next time I’ll up the hot sauce and/ or cayenne. It wasn’t very sweet which was a nice change from the usual pulled pork
