Ingredients

  1. 2 (4 ounce) tilapia fillets
  2. 1 teaspoon Cajun seasoning, or to taste
  3. 6 (8 inch) flour tortillas, warmed
  4. 1 small red onion, finely chopped
  5. 1 jalapeno pepper, seeded and finely chopped
  6. ½ cup shredded lettuce
  7. ¼ cup salsa

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Grease or line a rimmed baking sheet with foil.
  2. Rinse tilapia and pat dry. Rub all sides with Cajun seasoning. Place on the prepared baking sheet.
  3. Bake in the preheated oven until fish flakes easily with a fork, about 20 minutes. Cut into bite-sized chunks.
  4. Assemble tacos in tortillas with onion, jalapeno, lettuce, and salsa.

12.30.21 The 400ºF temp is pretty high, and since my filets were on the thin side, I took them out at 12 minutes; they were perfectly done (and tasty on their own). I really didn’t measure the Cajun seasoning, just gave the tilapia filets a pretty heavy shake. I did add some sour cream and shredded cheddar to the tacos, served with some Instant Pot® refried beans, and we were happy with the way this meal turned out.
